How To make Cream Cheese Pancakes
2 Eggs
5 ts All purpose flour
1 1/2 ts Sugar
1 ts Butter, melted
8 oz Cream cheese, softened
Lightly beat eggs in large bowl. Add softened cream cheese, flour, sugar and butter. Mix until well combined. (Mix will be slightly chuncky). Spray a pre-heated 275 degree electric griddle with vegetable cooking spray and ladle butter by teaspoonfuls onto griddle. Cook pancakes until golden, about 3 minutes. Turn and brown other side about 2 minutes more. Sprinkle pancakes with confectioners sugar and garnish with lemon wedges. Serve with fresh berries, warm applesause, or maple syrup.

3. Whip the egg whites to dry peaks, so the pancakes will come out thicker
4. All the way low heat, about 5 minutes on each side, you can either add a small spoonful of water or not.

Keto Pancakes with Cream Cheese
These keto pancakes with cream cheese are super easy to make. Just blend the ingredients in a blender cup and put into a hot pan. No hand mixing or dirty bowls to wash!

Ingredients:
2 oz Cream Cheese
2 Large Eggs
2 Tbsp Coconut Flour or 4 Tablespoons Almond Flour
1 tsp Swerve Sweetener
1tsp baking powder
pinch of salt
splash of Vanilla
Instructions:
Heat a non-stick skillet or griddle over medium heat and spray with cooking spray
Combine all ingredients in a blender and pulse until mixed
pour enough batter to make each pancake approximately 4 inches across
Brown on both sides and serve hot with sugar free syrup

Ingredients:
•2 ounces cream cheese
•2 eggs
•1 packet keto-approved sweetener like Lakanto’s
•1/2 teaspoon cinnamon (optional, but so tasty)
Method:
•Add all ingredients to a small mixing bowl. Mix well. Electric mixers or immersion blenders make it easier.
•Allow mixture to rest 2 minutes to let the bubbles settle.
•Preheat a medium frying pan to medium heat and grease with butter or oil of choice.
•Using a large ladle, spoon mixture onto a hot greased pan. Cook about 1 minute until you start seeing bubbles rise to the top of the pancake.
•Using a spatula or your pan flipping skills, flip the pancake over. Cook for an additional minute or so until golden brown on both sides.
•Serve with sugar free maple syrup and butter.
Makes about 2-4 pancakes. 4 net carbs for recipe.

1 tsp. pure vanilla extract
pinch of kosher salt
Butter, for cooking
Sliced strawberries, for garnish
Powdered sugar, for garnish
Maple syrup, for drizzling
DIRECTIONS
1. Make batter: In a large bowl using a hand mixer, beat cream cheese and sugar until smooth. Add in eggs, vanilla and salt and beat until combined.
2. In a large skillet over medium heat, heat butter. Pour about ¼ cup batter into the pan, then cook until golden, about 2 minutes. Flip and cook for one more minute.
3. Serve with strawberries and a dusting of powdered sugar. Drizzle with syrup, if desired.
