Ingredients 2 qt cranberries 3 qt water 6 each quinces 1
sugar
Directions: Wash quinces. Remove stems and blossom ends. Chop with coarse knife of food chopper. Combine with stemmed cranberries which have been washed. Add water. Cook until fruit is soft. Pour into jelly bag and drain overnight. Empty juice into large saucepan. Boil hard 20 minutes. Measure and add an equal amount of sugar. Boil rapidly until jelly sheets from spoon.

Quince Cranberry Jam
Quince and cranberries may just be a fruit marriage made in heaven. Both are inherently tart and slightly bitter, but mellow and grow sweeter when cooked with the addition of sugar. Great with cheese, on toast or scone or alongside chicken, turkey or pork.

Cranberry Holiday Jam

Makes a little over 2 (16 ounce) jars: 2 whole pears, peeled, cored and chopped
2 small apples, peeled, cored and chopped 16 ounces fresh cranberries 3 cups of sugar ½ cup water 1 orange, juiced and zested (zest before juicing) 1/8 – 1/4 teaspoon cinnamon or 1 cinnamon stick
Combine all of the ingredients in a saucepan. Stir and cook over medium heat until it comes to a boil.
Reduce the heat to medium low and stir well. Let the fruit cook for about 45 minutes to 1 hour, stirring regularly, until it has reduced and thickened, and all the fruits have melted.
Remove from the heat, fill jars with the jam and set aside to cool.
Serve this jam alongside scones, toast, over oatmeal or in a yogurt parfait. Spread it between Linzer cookies or use it to make little puff pastry desserts. The options are endless.

Quince Jam - two ways??
This year I got more quince than usual and made lots of delicious recipes with this fragrant fruit. Growing up my mom always made us quince jam two ways, as chunks perfect as a dessert served with yoghurt, or grated so that it could be easily spread on toast. I love serving the second variation on my cheese board and it is simply incredible with any of your favourite cheese.
