Baked Cod with Garlic And Herb Ritz Crumbs

Ingredients
Good olive oil
4 center-cut boneless, skinless cod fillets (6 to 8 ounces each)
Kosher salt and freshly ground black pepper
1/2 cup Ritz cracker crumbs (15 crackers; see Cook's Note)
1/3 cup panko (Japanese bread flakes)
2 tablespoons minced fresh parsley
2 teaspoons minced garlic (2 cloves)
1 teaspoon grated lemon zest
3 tablespoons unsalted butter, melted
1/4 cup dry white wine, such as Pinot Grigio
2 tablespoons freshly squeezed lemon juice
Lemon wedges, for serving
Directions
Preheat the oven to 400 degrees F.
Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don’t worry if some crumbs get into the sauce!)
Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
Cook’s Note
To make the crumbs, crush the Ritz crackers into the bowl of a food processor fitted with the steel blade and process until finely ground.

Peanut Butter Crumble

graham crackers, vegetable oil, instant cake mix, butter, peanut butter
*Recipe*
Preheat the oven to 350 degrees F/180 degrees C.
Put the crackers in the blender and crumble them.
In a bowl, put the eggs and the vegetable oil.
Whisk the eggs.
Add the instant cake mix and combine it with the eggs using an electric mixer.
Grease with butter a baking tray.
If you want, coat the tray with breadcrumbs.
Put the graham crackers crumbs in the baking tray and press it with a spoon on the bottom.
Pour half of the chocolate filling in the tray and spread it all over the crumbs.
Add a layer of peanut butter.
Add the remaining chocolate filling.
Break the waffle into small pieces, put it in a food processor to make crumbs.
Sprinkle the waffle crumbs on the chocolate cream.
Bake the dessert for 20 minutes.

RECIPE: Graham Cracker Crumbs
INGREDIENTS:
10 full sheets graham crackers
INSTRUCTIONS:
1: Method 1: Put graham crackers in a thick gallon resealable bag. Use a rolling pin or the bottom of a thick glass or mug to crush the graham crackers.
2: Method 2: Place the graham crackers in a food processor. Process until they are in small crumbs.
NOTES:
Use the graham cracker crumbs to make a graham cracker pie crust or for use in other recipes.

How to turn some plain graham cracker crumbs into a very nice dessert square. So quick and easy! One bowl, no mixer required.
3 cups graham cracker crumbs (you can make these yourself by crushing up graham crackers, but the crumbs are sold in grocery stores too, usually in the baking section).
1 cup evaporated milk (full fat or 2%)
1 cup white granulated sugar
1/4 cup butter, room temperature
1 tsp vanilla extract
1/2 cup chopped nuts (pecans or walnut) Optional
1 cup semi-sweet chocolate chips.
Put everything in a bowl and stir until combined.
Spoon into a greased 8x8 baking dish and bake at 350 F for 35 minutes until set and light brown on edges.
Cool and cut into squares.
