How To make Cowboy Pintos
8 ounces dried pinto beans
2 tablespoons olive oil
1 large onion
diced
4 cloves garlic :
finely minced
3 carrots cut in 1/2" pieces
2 stalks celery :
cut in 1/2" pieces
28 ounces canned tomatoes chopped
juices reserved in a measuring cup 6 cups water
2 sprigs fresh thyme
1/2 teaspoon dried oregano
2 sprigs cilantro :
tied
1/4 cup chopped cilantro
pepper cooked rice or barley -- optional
[1] Sort and wash beans. Soak overnight, covered with 2 inches of water. Rinse several times and drain. Set aside. Add fresh cilantro, parsley, and/or basil at the very end. [2] Place oil in a large, heavy pot over medium-low heat. Add the onion and cook 10 minutes or until wilted. Add garlic during last 2 minutes. Stir occasionally. Add carrots, celery and reserved drained beans. [3] Add tomatoes and 1/2 cup of the reserved tomato juices, water, thyme and oregano. Stir in the cilantro sprigs. Bring to a boil, reduce the heat to medium and simmer, uncovered, for about 1 1/2 hours or until beans are tender but not mushy, skimmy any foam that rises to the surface. Remove tied cilantro and add freshly chopped cilantro; season with pepper to taste. Make sure the beans are softened to your satisfaction before adding salt. [4] Serve over white rice or barley.
Serve 6: per 1/6 233 cals, 38 g carbs, 10 g prot, 6 g fat, no chol.

CHARRO BEANS (cowboy beans) is a traditional Tex Mex dish, they are made with Pinto Beans in a delicious broth that is packed with flavor. CHARRO BEANS are named after the traditional Mexican cowboy horseman or charros. It is a perfect side dish that goes perfect with Carne Asada, Beef or Chicken Fajitas, or the traditional Mexican Sopas (stews). I love seasoning the broth with tomato flavored chicken bouillon, pepper and adding bacon, sausage, onions, garlic, tomatoes, jalapeños and cilantro for sure, but the beauty of the Charro Beans is that you can mske them your own by adding what you want...some people like to use chorizo, ham, pork or weenies, and it's all good too. Charro Beans were always a must side dish when I was growing up, especially when we barbequed on weekends or for family gatherings, Charro Beans have been a tradition in my family and I have kept the tradition going as an adult.
INGREDIENTS
BEANS
1 LB. Pinto beans (cleaned and rinsed well)
1/2 medium onion (scored)
2 tsp salt
2 large garlic cloves (mashed)
8 C. water
CHARRO BEANS WITH BROTH
5 slices thick cut smoked bacon (diced)
1/2 medium onion (diced)
5 medium green onions (chopped white and green)
1/2 smoked beef kielbasa (slices)
1/2 tsp garlic powder
1/2 tsp onion powder
3 large minced garlic cloves
2 large Roma tomatoes (diced)
2 Tbsp canned sliced jalapeños (optional)
1/4 C. jalapeño juice (optional)
medium/large bunch chopped cilantro
1 &1/2 Tbsp tomato flavored chicken bouillon
(I like KNORR brand) (won't taste the same if you leave this out)

Slow Cooker Spicy Pinto Beans {The BEST Mexican side dish}

I often make these beans instead of refried beans along with enchiladas or taco night. These beans have quite the spicy kick to them!
RECIPE:
INGREDIENTS:
1 lb. dried pinto beans no need to presoak
1 cup diced yellow onion
1-2 jalapenos sliced
2 tsp. chili powder
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. pepper
32 oz. container chicken broth
2 cups water
Add at the end:
¼ tsp. salt or more to taste.
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Rinse and drain the beans, discard any dirt clumps or rocks. Add to the slow cooker.
Add the onion, jalapenos, chili powder, onion powder, garlic powder, pepper, chicken broth and water to the slow cooker with the beans. Wait to add the salt.
Cover and cook on HIGH 7-8 hours. Do not open the lid while they cook, or they will not get tender.
When the cooking time is done mash about 1/4 of the beans with a potato masher right in the slow cooker. Or you can put a scoop in a bowl and mash with a fork and add back to the slow cooker. This will make the beans creamy, which the slow cooker can't do since the simmer is so low. Add salt to taste, I usually use 1/4 tsp.
Serve as a side dish or as a main with tortillas or cornbread. Enjoy!
