How To make Cornish Hens with Wild Rice For Smoker
2 Cornish game hens
1/4 c Green onions, chopped
3 tb Butter
1 c Cooked wild rice
1/4 c Pecans or walnuts, chopped
1/2 c Lime marmalade
1/4 c Orange juice
Salt
Rinse hens, pat dry and season cavity with salt. Saute' onions in 1 Tbsp. butter, stir in rice and chopped nuts. Stuff hens with rice mixture and secure opening. Prepare glaze by melting 2 Tbsp. butter in a saucepan. Add marmalade and orange juice, blend until smooth. Brush hens with glaze and place on smoker grid. Brush with glaze before serving. CHARCOAL: Use 5 lbs. charcoal, 3 quarts hot water, 2 wood sticks and smoke 2 - 2 1/2 hours ELECtrIC: Use 3 quarts hot water, 2 wood sticks, and smoke 2 - 2 1/2 hours. GAS: Use 3 quarts hot water, 2 wood sticks, and smoke 2-3 hours. Source: "Cook'n Ca'Jun Water Smoker Cookbook"

Cornish Game Hens are easy to cook delicious little mini chickens that you need to start cooking ASAP. They're perfect for dinner parties or simply mixing up family meal night. You can roast the hens whole, or spatchcock them flat, and you're in luck because this video walks through both methods. In this video, I walk you through two different recipes for Cornish Hens, one is a traditional stuffed whole roasted hen, and the other is a spatchcock jerk style heavily seasoned hen. Both are smoked on my big green egg, but for those non BBQ folks, you can just as easily toss them in the oven matching times and temp. Follow along and let me know what you think!

Ingredients:
- Lemon Garlic Hen Ingredients -
1 whole Cornish hen
1 Tbsp. Salt
1 Tbsp. Black Pepper
1 Tbsp. Garlic Powder
1 tsp. Baking Powder
10-15 cloves of garlic (smashed, chopped or minced)
1 lemon sliced
Olive oil
- Jerk Style Hen -
1 Tbsp. Chipotle powder
1 Tbsp, Smoked Paprika
1 Tbsp. Red Pepper Flakes
Musket Powder Gold Label to taste (or any smoky spicy BBQ rub of choice)
olive oil
