How To make Cornish Hens with Wild Rice For Smoker
2 Cornish game hens
1/4 c Green onions, chopped
3 tb Butter
1 c Cooked wild rice
1/4 c Pecans or walnuts, chopped
1/2 c Lime marmalade
1/4 c Orange juice
Salt
Rinse hens, pat dry and season cavity with salt. Saute' onions in 1 Tbsp. butter, stir in rice and chopped nuts. Stuff hens with rice mixture and secure opening. Prepare glaze by melting 2 Tbsp. butter in a saucepan. Add marmalade and orange juice, blend until smooth. Brush hens with glaze and place on smoker grid. Brush with glaze before serving. CHARCOAL: Use 5 lbs. charcoal, 3 quarts hot water, 2 wood sticks and smoke 2 - 2 1/2 hours ELECtrIC: Use 3 quarts hot water, 2 wood sticks, and smoke 2 - 2 1/2 hours. Savory Stuffed Cornish Hens with Chef Greg | REC TEC Grills
INGREDIENTS:
6-8 Cornish hens
1oz olive oil
4 tbsp REC TEC Grills Colden's Freakin Greek Rub
Stuffing:
12oz stuffing mix
1oz olive oil
3/4 cup button mushrooms, sliced
3/4 cup onion, diced small
3/4 cup Granny Smith apples, diced small
3/4 cup celery, chopped
6 tbsp butter, melted
1 tbsp REC TEC Grills Colden's Freakin' Greek Rub
1.5 cups chicken stock
INSTRUCTIONS:
Pre-heat REC TEC Grill to 375℉ with a cast-iron pan.
Add the oil and mushrooms to the pan, cooking for 6-8 minutes until the mushrooms are golden brown.
Add the remaining vegetables and cook for 4-5 minutes until tender.
In a large bowl add the cooked vegetables, butter, Colden's Freakin' Greek Rub, stuffing mix, and enough chicken stock to hydrate the stuffing (usually about 1-1.5 cups of stock).
Allow the mixture to rest at room temperature for 20 minutes.
On a cutting board, trim any excessive fat or skin form the Cornish hens, then stuff each hen with 4-5oz of the vegetable stuffing mixture.
Secure the legs with butchers twine.
Season the hens with olive oil and Colden's Freakin Greek Rub.
Cook at 375℉ until the internal temp. of the breast registers 165℉ (75 minutes).
Allow the hens to rest for 15-20 minutes before carving.

2-3 carrots
2-3 stalks of celery
1 large yellow onion
rosemary/thyme/parsley
4 cloves of garlic
1 lemon

Compound Butter:
1 stick kerry gold butter (room temp)
1 tbsp each rosemary and thyme
2 cloves minced garlic
lemon zest

Gravy:
2 tbsps butter
2 tbsps flour
1/2 cup pan drippings
salt, pepper, garlic, onion powder (or cajun seasoning)
1 cup chicken broth
1/4 cup heavy cream
