They are called ABC because they are filled with Vitamins A B & C plus Iron, Phosphate and Potassium. My mother made this cookie every Christmas season when I was a kid and still does for the grandkids. They are super moist and chewy cookie. Good keepers if you hide them. Chocolate Chip Four Leaf Clover Cookies! (St. Patrick's Day)!
Ingredients: (Makes 8-10 large cookies!)
1/2 cup butter (1 stick), softened
1/3 cup powdered sugar
1/4 tsp vanilla extract
green food coloring
1 cup all purpose flour
1/4 cup chocolate chips or mint chocolate chips (I used regular mini chocolate chips.)
4-leaf clover or shamrock cookie cutter
Directions:
1. Beat together the softened butter and powdered sugar with an electric mixer until smooth and creamy.
2. Add in the vanilla extract and green food coloring until the desired color is reached and mix to combine.
3. Add in the flour a little at a time and mix to combine. (Be sure not to over mix it!)
4. Fold in the chocolate chips with a wooden spoon.
5. Place the dough inbetween two pieces of parchment paper and roll out about the size of the chocolate chips.
6. Place the dough in the refrigerator for 30 minutes.
7. Preheat the oven to 325 degrees and remove the dough from the refrigerator.
8. Line a cookie sheet with more parchment paper and cut out the shapes using your cookie cutter. (You can place the dough pieces together and cut out more shapes!)
9. Place the cookies onto the prepared cookie sheet and bake 15-18 minutes. (Be careful to not break the cookies during this part! If you do, just push them back together!)
10. Remove the cookies from the oven and let them sit for a couple minutes before transferring them to a cooling rack to cool completely. Enjoy!!!
These cookies are so yummy and easy to make! You could easily double the recipe to get more!!! I actually cut the original in half so I didn't have too many! The kids loved them and I could make these for every holiday!!! You could even use white chocolate chips!!! I bet mint chocolate chips would be delicious too, but my kids don't really care for mint. Thanks for watching!!! Happy St. Patrick's Day!!!
