How To make Chocolate Nut Filled Cookies
2/3 c Shortening
2/3 c Sugar
2 Eggs
2 c Flour, all-purpose
1 1/2 ts Baking powder
1/2 ts Salt
1/4 c Sugar
1 tb Cornstarch
1/2 c Chocolate syrup
1/4 c Pecans; chopped
Cream shortening and sugar until light and fluffy; add egg, and beat well. Add flour, baking powder, and salt; mix well. Chill dough 2 to 4 hours.
Roll out dough to 1/8" thickness on a lightly floured board. Cut half of dough into 36 circles with a 2" cookie cutter. Using a 2" doughnut cutter, cut remaining dough into 36 circles. Place solid circles on lightly greased cookie sheets. In center of each circle, place a teaspoon of Chocolate-Nut Filling; spread almost to the edges. Top with a circle cut with doughnut cutter; seal edges with fork tines. Bake at 350 degrees for 10 to 12 minutes. (Cookies may be filled with jam.) Dough:
430g / 3 glasses of flour
200g of butter
150g / 3/4 of glass of sugar
10-15g of vanilla sugar
2 tsp of baking powder
3 egg yolks
3 tablespoons of sour cream
Filling:
150g of butter
100ml of milk
130g / 0,5 glass of sugar
40g / 4 tablespoons of cocoa powder
180g / 2 glasses of milk powder
3 tablespoons of crunchy peanut butter

Preheat oven at 160°C for 15-18mins
Yield: about 80-85 pcs
// Ingredients
180g Butter
35g Castor Sugar
25g Brown Sugar
1½tsp Vanilla Essence
185g Plain Flour
20g Cocoa Powder
20g Milk Powder
25g Tapioca Flour / Rice Flour
30g Corn Flour
30g Hazelnut Powder
1 Egg Whites (or substitute with milk)
20-30g Diced Almond

Recipe makes 8 large cookies
Ingredients:
1 cup (2 sticks) butter [227 g]
1 (packed) cup dark brown sugar [220 g]
1/2 cup granulated sugar [100 g]
2 large eggs [100 g]
2 tsp vanilla extract [10 mL]
1 1/2 cups cake flour [180 g]
1 1/2 cups AP flour [180 g]
1 tsp cornstarch [2.5 g]
3/4 tsp baking soda [3.8 g]
3/4 tsp table salt [4.3 g]
2 cups semi-sweet chocolate chips [340 g]
2 cups walnuts (roughly chopped) or 2 cups dark chocolate chips [240 g]
Oreshki/Chocolate walnut-shaped cookies,filled with chocolate ganache/Орешки
These Russian Walnut-Shaped cookies is very popular dessert. In Russian oreshki means walnuts. They are traditionally made in a spesial mold that is called oreshnitsa and filled with either cream or caramel. Today, I want to show you more luxuries version: Chocolate cookie dough oreshki filled with chocolate ganache and...as a surprise, we are going to put hazelnut in a center of each cookie. Also, to make them look like they were found in a magical forest: I am going to spay couple with edible Gold.
Oreshki recipe:
3 eggs
¾ cup(180g) melted butter
½ cup sugar
1½ cups(350g) flour
¼(50g) cocoa powder
1 tsp baking powder
½ tsp salt
Method:
In a mixing bowl add: eggs and sugar and whisk until pale yellow.
Add salt and melted butter, whisk.
Add baking powder.
Add cocoa powder and couple table spoons of flour, whisk.
Add remaining flour and using spatula mix until all flour has been incorporated and dough becomes even.
Cover and refrigerate for 30 min.
Preheat oreshnitsa(no greasing needed if you are using a non-stick coated one)
Make small balls out of the dough and cook walnut halves until they become crispy( 2 min or so).
Let walnut halves cool, then trim edges.
Make Chocolate Ganache filling.
Chocolate Ganache Recipe:
340g(12oz bag) Semi-Sweet chocolate marseles
170g(¾ cup) Heavy cream
Heat up heavy cream and pour over chocolate.
Mix until smooth and glossy.
Cover and refrigerate for 1 hour.
Put cookies together by filling up each half with chocolate ganache.
Place whole hazelnut/walnut/or almond in a center and paste them together.
To make them look more beautiful you can spray them with edible Gold, or simply dust them with icing sugar.
