How To make Chocolate Amaretto Cheesecake (Lf)
6 ea Chocolate wafers; finely
-crushed 1 1/2 c Cheese, cream; light process
-product 1 c Sugar;
1 c Cheese, cottage 1%; low-fat
1/4 c +2 tb unsweetened cocoa;
1/4 c Flour, all-purpose;
1/4 c Amaretto;
1 ts Vanilla;
1/4 ts Salt;
1 ea Eggs;
2 tb Semisweet choc mini morsels;
x Chocolate curls;*optional
PER SERVING:

7 7/8 x *gm fat
26 1/8 x *gm carbo
36 x *mg chol
13/16 x *mg iron
293 x *mg sodium
59 x *mg calcium
Sprinkle chocolate wafer crumbs in bottom of a 7-inch+ springform pan. Set aside. Position knife blade in food processor bowl; add cream cheese and next 7 ingredients, processing until smooth. Add egg and process just until blended. Fold in Chocolate morsels. Slowly pour mixture over crumbs in pan. Bake at 300^F for 65 to 70 minutes or until cheesecake is set. Let cool in pan on wire rack. Cover and chill at least 8 hours. Remove sides of pan, and transfer cheesecake to a serving platter. Garnish with chocolate curls*, if desired. Yield: 12 servings +You can substitute an 8-inch pan for this cheesecake recipe, if desired. The larger cheesecake will require only 45 to 50 minutes baking time. *To make chocolate curls, melt 3 squares semisweet chocolate. Pour the melted chocolate onto wax paper and spread to a 3-inch wide strip. Let stand until cool but not firm. Pull a vegetable peeler across the chocolate, and transfer curls to a plate. Store chocolate curls in the freezer. **Chocolate-Mint Cheesecake: Substitute 1/4 c creme de menthe for amaretto. Yield: 12 Servings. 197 calories, 6.7gm protein, 7.1gm fat, 27.2gm carbo, 36mg chol, 0.8mg iron, 289mg sodium, 58mg calcium

I recently discovered the beauty of Basque cheesecakes, which are nowhere near as daunting as making a regular baked cheesecake because there is no need for a water bath. They are usually flavored with vanilla, but here, coffee, amaretto, and a hint of maple syrup create a mellow, slightly earthy and caramelized flavor profile. And because I want the coffee and amaretto in this recipe to really shine, we will be dividing the cheesecake mix in half and flavoring them both separately, before swirling them together. With individual bursts of coffee and almond flavors running throughout, this couldn't be more delicious. ~Crystelle Pereira

Here is a fabulous white chocolate cheesecake which is absolutely delicious, easy to make and stunningly elegant! Great for a party of holiday treat!
Ingredients:
4 bricks cream cheese (room temperature)
4 eggs
1 cup sugar
1 heaping spoon sour cream
2 teaspoons pure vanilla extract
1/3 cup melted white chocolate (highest quality)
Butter for pan
Graham crumbs for pan
Almond slices - pan roasted
Dark chocolate - melted for scribble effect

INGREDIENTS
FOR THE CRUST
1 1/2 c. Nilla Wafers, crushed
6 tbsp. butter, melted
1/3 c. sugar
Pinch kosher salt
FOR THE FILLING
4 8-oz. bars cream cheese, softened
1 1/2 c. sugar
3 tbsp. cornstarch
4 large eggs
1/3 c. amaretto liqueur
1 tsp. pure vanilla extract
FOR THE TOPPING
1/3 c. brown sugar
2 tbsp. butter
3 tbsp. heavy cream
1/2 tsp. salt
1 c. slivered almonds
DIRECTIONS
1. Preheat oven to 325º and butter an 8 or 9 springform pan. Make crust: in a large bowl, combine crushed Nillas with butter, sugar and salt. Pat into prepared springform pan and set aside while you make the filling.
2. In a large bowl using a hand mixer, beat cream cheese and sugar until completely smooth and fluffy. Add cornstarch, then add eggs. Add Amaretto and vanilla and mix to combine.
3. Pour batter into crust and place on a large baking sheet. (If you'd like to use a water bath, tightly wrap outside of springform pan with two layers of aluminum foil. Transfer to a deep roasting pan and pour in enough boiling water to reach halfway up the cheesecake pan. Bake as directed.)
4. Bake until center of cheesecake is only slightly jiggly, 1 hour 20 minutes to 1 hour 30 minutes. Let cheesecake cool in oven, 1 hour, then refrigerate until completely cool, 4 hours or up to overnight.
5. Meanwhile, make topping: In a small saucepan over medium heat, combine brown sugar, butter, cream and salt. Bring to a simmer and let thicken for two minutes. Add slivered almonds and toss until they are coated and shiny. Let cool slightly.
6. Spoon topping over cheesecake and serve.
