Today I’m sharing my delicious and easy chicken stew recipe! This easy Korean chicken stew is the perfect one pot chicken recipe. Just toss in the chicken, veggies, sauce and slow cook until fork tender. Try this Korean spicy chicken stew and it might just be the most delicious and juicy chicken stew you’ve ever had!

RECIPE (2-4 servings)
INGREDIENTS:
450g/1 lb bone-in chicken
2 potatoes
1 carrot
6-10 garlic cloves
1 inch piece ginger
3 green onions/spring onions
1.5-2 cups water
1 tsp toasted sesame oil
Cooking oil
—-sauce—-
3 tbsp gochujang/Korean red pepper paste
3 tbsp soy sauce (light/regular)
1 tbsp vinegar
1.5 tsp sugar
1 tsp Korean red pepper flakes/chilli flakes
(Add more red pepper flakes/chilli flakes to make it extra spicy)
METHOD:
1. Cut potatoes, carrots and green onions/spring onions into large chunks
2. Slice garlic cloves in half and lightly crush the ginger (this will infuse flavor without having to bite into ginger pieces)
3. Sear chicken on both sides until lightly browned
4. Add the sliced garlic and fry for 1 minute
5. Add the sauce ingredients and stir fry for 2 mins. This will lightly caramelise the sauce and make the stew super delicious
6. Pour in 1.5-2 cups of water. You can add more at the end if needed
7. Bring it to a boil. Add crushed ginger, potatoes, carrots, cover and simmer until the chicken is cooked through (about 30- 40 mins)
8. Once the chicken is cooked, taste the stew and adjust salt if needed. You can add more water if you want a thinner stew and cook it for a few mins
9. When the stew reaches your desired consistency, add the white part of green onions and simmer for 1 min
10. Add 1 tsp sesame oil, simmer for just 1 min and take off the flame
11. Serve it hot with rice and enjoy!

SUBSTITUTES:
• No gochujang?
There is no substitute for this as it is an essential ingredient. You can use miso but the flavour will be very different
• No red pepper flakes?
Some red chilli flakes or red chilli powder can be used
• What other vegetables can be used?
Onions, mushrooms and sweet potatoes. Bok Chou/cabbage can also be used but add it towards the end to keep a slight crunch

TIPS:
• Large pieces of bone-in chicken works very well. Leg/thigh pieces are perfect for this recipe
• Adding lightly crushed ginger instead of chopped ginger gives the stew good flavor without having to bite on pieces of ginger
• Add more red pepper flakes/chilli flakes depending on your spice tolerance. You can also exclude it for a mild stew

Ingredients
1½ lbs. chicken thighs, boneless, skinless, cut into bite size pieces
1 Tbsp. canola oil
3 medium carrots, sliced diagonally into ½-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, quartered
¼ cup fresh chopped parsley
salt and freshly ground black pepper
( i always add in extra seasonings... I added about 1/2 to 1 tablespoon of oregano...around a teaspoon of paprika...and around 1/2 tablespoon of garlic and herb seasoning)
Season the chicken with salt and pepper, to taste.
Heat oil over high heat. Add chicken and cook, stirring occasionally, until brown on all sides, about 6 minutes total. Transfer to a plate.
Add carrots and onion to the pot and cook, stirring often, until onions begin to soften, about 4-5 minutes. Add garlic and cook for about 30 seconds, stirring nonstop. Add ½ cup chicken stock while stirring and scraping to loosen browned bits from the bottom of the dutch oven.
In a small bowl, whisk together flour and ½ cup broth; add to the dutch oven. Stir in chicken and remaining 4 cups of chicken broth. Add bay leaf and season with salt and pepper, to taste. Bring to a boil, reduce heat to medium-low and simmer 25 minutes, partially covered.
Add potatoes and cook uncovered until potatoes are tender, about 18-20 minutes. The liquid will slightly reduce even further. Stir in parsley and discard bay leaf before serving.

This is an easy and healthy steamed herbal chicken recipe using Chinese herbal ingredients such as red dates, dang gui and goji berries. Using Le Creuset's buffet casserole to steam the chicken, the end result is a moist and tender chicken that is thoroughly cooked to perfection.
INGREDIENTS:
550g Half chicken (kampung chicken)
2 red dates, sliced
