How To make Chinese: Cashew Chicken 1
3 x Chicken breasts *
1/2 lb Chinese pea pods
1/2 lb Mushrooms
4 x Green onions
2 c Bamboo shoots, drained
1 c Chicken broth **
1/4 c Soy sauce
2 tb Corn starch
1/2 ts Sugar
1/2 ts Salt
4 tb Salad oil
1 pk Cashew nuts (about 4-oz)
* Boned and skinned ** Or bouillon cube dissolved in water Slice breasts horizontally into very thin slices and cut into inch squares. Place on tray. Prepare vegetables, removing ends and strings from pea pods, slicing mushrooms, green part of onions, and the bamboo shoots. Add to tray. Mix soy sauce, cornstarch, sugar, and salt. Heat 1 tbls of oil in skillet over moderate heat, add all the nuts, and cook 1 min shaking the pan, toasting the nuts lightly. Remove and reserve. Pour remaining oil in pan, fry chicken quickly, turning often until it looks opaque. Lower heat to low. Add pea pods, mushrooms, and broth. Cover and cook slowly for 2 mins. Remove cover, add soy sauce mixture, bamboo shoots, and cook until thickened, stirring constantly. Simmer uncovered a bit more and add green onions and nuts and serve immediately.

-Cooking oil 2-3 tbs
-Kaju (Cashew nuts) ¾ Cup
-Lehsan (Garlic) chopped 1 & ½ tbs
-Pyaz (Onion) sliced ½ medium
-Boneless chicken preferably thigh julienne cut 350g
-Sukhi lal mirch (Dried red chillies) 3-4
-Thai red chillies 4-5
-Hara pyaz (Spring onion) white part julienne ¼ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Namak (Salt) ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp or to taste
-Hara pyaz (Spring onion) leaves julienne ¼ Cup
Directions:
-In a bowl,add soy sauce,water,fish sauce,dark soy sauce,oyster sauce,sugar,whisk well & set aside.
-In a wok,add cooking oil,cashew nuts & fry until light golden & set aside.
-In the same wok,add garlic & mix well for a minute.
-Add onion,mix well & saute until translucent.
-Add chicken & mix well until it changes color.
-Add dried red chillies,thai red chillies,spring onion white part,capsicum,salt,black pepper powder & mix well.
-Add prepared sauce,mix well & cook for 3-4 minutes then cook on high flame until it dries up.
- Add spring onion leaves,fried cashew nuts & mix well.
-Serve thai cashew chicken with fried rice!

-Dried red chillies,thai red chillies,hara pyaz white part,shimla mirch,namak ar kali mirch powder dal ker ache tarhan mix ker lein.
-Tayyar sauce dal ker ache tarhan mix karein aur 3-4 minutes kliya paka lein phir tez ancch per sukh janay tak paka lein.
-Hara pyaz leaves aur fried kaju dal ker ache tarhan mix ker lein.
-Thai cashew chicken ko fried rice ka saath serve karein!

A very warm welcome back to What’s For Tea :) Tonight for tea, I made this amazing Chinese takeaway inspired chicken with cashews! Seriously tasty and super easy to make. I used my slow cooker, but if you don’t have a slow cooker, it’s just as easy to make on the hob. The sauce is beautifully savoury, with a slightly sweet edge, lovey tender chicken with a fab contrast in texture from the crunchy cashews & vegetables…just wonderful!

Enough for 4 generous servings
ShoppingList:
600g (1.3 lbs) Chicken - I used fillets (tenders) but chicken breast would work too.
70g (1/2 cup) Plain/all purpose flour
Salt & Pepper - 1/2 teaspoon each
2 Tablespoons oil for frying - I used sesame oil, but use whatever you prefer
60ml (1/4 cup) Soy sauce
60g (1/4 cup) Tomato ketchup
1 Tablespoon brown sugar
2 Tablespoons of apple cider vinegar, rice wine vinegar or white wine vinegar
2 Teaspoons ground ginger
1 Heaped teaspoon minced garlic
350ml (1.5 cup) Chicken stock
140g (1 cup) Cashew nuts
Vegetables of your choice - I used water chestnuts, but carrots, broccoli, onions and peppers and spring onions are all great in this.
**Optional finely cut chives or spring onions for presentation**
