If you are an avid fruit & cheese lover like me, then a customized fruit and Cheese Platter is a perfect appetizer to a dinner party, picnic or birthday celebration. Pair it with creamy& flavorful chicken sandwiches packed with vegetables & hard boiled eggs for a wholesome meal.

INGREDIENTS FOR POACHING CHICKEN:-
Chicken breast pieces 453gms/1lb
Whole spices- Peppercorns (8gms/0.2oz), Cloves (4gms/0.1oz), Bay leaves (2), Cinnamon Stick (1), Green Cardamoms (4), Salt (4gms/0.1oz), increase the amount if you prefer)
Onion (12gms/0.4oz)
Fresh Coriander/Cilantro (12gms/0.4oz)
Lemon/Lime (12gms/0.4oz)
Hard-boiled Eggs (2)
Ginger ( 7gms/0.2oz)
Garlic (3 cloves0
Celery (1 stalk)
INGREDIENTS FOR SALAD DRESSING:-
Sour cream (2 tbsp)
Butter (1/2 tbsp)
Mayo (1 1/2 tbsp)
tomato (1)
Honey (1/2 tsp)
Cucumber (1/2)
Spice Mix- Chilli Powder (1/2 tsp), Kashmiri Powder (1 tsp), Garlic
Powder(1 tsp), Onion powder (1 tsp) & Pepper Powder (1 tsp)
Olive Oil (1/2 tsp)
Baby Carrots (25gms/0.88oz)
Mustard Paste (coarse/dijon) (7gms/0.2oz)
Crushed Pineapple (1 tsp)
Cajun & Mediterranean Spices (1/2tbsp +1 tbsp)
Sea/Table/Pink Salt (as per taste)
For optimal cheese flavor, bring to room temperature.
Fruits of different color and texture to add variety to the platter.
Fillers like nuts, jams, dark chocos, crackers & honey are perfect accompaniments with cheese
& fruits.
For sandwich fillings, use vegetables of your choice.
Poaching is a healthy “moist-heat” method of cooking (usu., in a liquid (mostly water) at a low temperature) for a more flavorful, tender & juicy chicken through a gentle simmering process
Remember these 4 tips:
1. 4:2 ratio (4 cups of water for about 1 lb of chicken)
2. Season the water well with salt & spices
3. Flip in between depending on the size of the chicken pieces
4. Check after 10 mins for doneness ( internal temp of 165 F)
You can assemble the board in a short time if you remember these 3 simple tips:-
1. An assortment of soft (like brie, feta, cream, fontina, mozzarella, etc) & hard (like parmesan, manchego, provolone, cheddar, gruyere) cheeses
2. Addition of fruits like apples, berries, grapes, pears, dried apricot, dates oranges
3. Fillers like honey, dark choco, crackers&bread, olives, jams, nut mix, cured meats

CHICKEN POTATO SALAD / SIMPLE AND EASY TO MAKE / CREAMY AND FLAVORFUL
This CHICKEN POTATO SALAD is a Filipino version af chicken potato salad most commonly seen during the holiday seasons. Creamy and loaded with flavors that you can served as the main dish or side dish. Condensed milk might seem like an odd addition but it does add creaminess and balances the savory flavor. You may season the chicken if you like, but this salad is loaded in flavor and creaminess that the cooked chicken will absorbed once mixed

INGREDIENTS:
4 Potatoes, boiled
1/2 cup diced carrots, boiled - cooked for 3 minutes not 30 ???? (typo).
1/2 pound chicken breast, seasoned with salt and cooked
3 large hard-boiled eggs
1 small onion, peeled and diced
1/2 cup crushed pineapple, drained
1/4 cup sweet pickle relish
1/2 cup mayonnaise
2 tbsp condensed milk (or more depends on your taste)
salt and pepper to taste
