4 chicken legs
Spices:
2 tsp smoked paprika
2 tsp chili powder
2 tsp garlic powder
1 tsp cayenne pepper
1 tsp thyme
Salt to taste
2 Tbsp olive oil
Juice of a lemon
Sauce:
1/2 cup low fat yogurt
1/2 light mayo
10-15 pickled jalapeños
2 Tbsp pickle juice
1 Tbsp Dijon mustard
1 Tbsp white vinegar
1/4 cup water
1 Tbsp Cajun
Air fry for a total of 40-50 minutes at 375 flipping mid way through

Ingredients -
For The Chicken -
2 tsp (10ml) - Olive Oil For Chicken Seasoning
8 - Large Chicken Thigh, Boneless & Skinless
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1/2 tsp (1g) - Dried Thyme
1/2 tsp (1g) - Dried Oregano
Salt & Pepper
1 Tbsp (20ml) - Olive Oil For Cooking Chicken
Creamy Garlic Mushroom Sauce -
1 Tbsp (14g) - Unsalted Butter
2 - Shallots, Finely Diced
300g (10.5oz) - Swiss Brown Mushrooms
100ml (100g) - Dry White Wine
6 - Garlic Cloves, Minced
1g (0.03oz) - Fresh Tarragon
3g (0.1oz) - Fresh Parsley
300g (10.5oz) - Thickened Cream
50g (1.7oz) - Parmigiano Reggiano, Freshly Grated
Recipe Notes -
This dish is best when fresh, as the cream-based sauce can potentially split upon reheating. If you wish to store it, it will last two days in the fridge. I don't recommend freezing it.
This recipe is fantastic on its own but can also be served with all your favourite sides, such as mashed potato, pasta, rice and a wide range of vegetables.
The fresh herbs are optional, as well as the parmesan cheese, but they add incredible flavour. They can be substituted for their dried counterparts if you can't source fresh herbs. Use 1 tsp of dried parsley and 1/4 tsp of dried tarragon. The tarragon can easily overpower the dish if used too much. You can always add but can't take out, so adjust to your liking.
Cream alternatives will no longer make this dish the fantastic recipe that it is. Without cream, you'll need to add flour as a thickening agent, ruining the sauce's texture.

Shrimp with Creamy Garlic Sauce

Creamy garlic parm shrimp
Serves 2
3-4 Table spoons neutral oil (Grape seed or sunflower oil)
1 lb Peeled deveined shrimp size 8-12
2 Tablespoons Salted butter
1 Tablespoon minced garlic
1/4 cup white wine (Chardonay)
1/2 cup Heavy cream
1/2 cup Grated parmesan cheese
Salt & Black Pepper to taste
Optional Garnish: Chopped parsley & Chili flakes
1. Add oil to a pan on medium heat.
2. Season the shrimp with salt and black pepper. Make sure to get both sides.
3. When the oil is hot, carefully add the shrimp. Cook each side for 2 minutes. When they’re done remove and reserve.
4. Discard any excess oil. Turn the heat down to medium low. Add the butter and let it melt.
5. Next add minced garlic. Fry until its fragrant or turns a light blonde color (about 1-2 minutes).
6. After that add the wine and let it reduce.
7. When the wine is almost dry combine the heavy cream, parmesan cheese and continue to reduce.
8. When the sauce is at your desired consisgtency season with salt to taste.
9. Finish with the chopped parsley and the cooked shrimp from earlier.
10. Serve hot with more chopped parsley and red pepper flakes.

-Lehsan (Garlic) 1 bulb
-Boneless chicken thighs with skin 500g
-Namak (Salt) to taste
-Kali mirch (Black pepper) crushed to taste
-Dried oregano to taste
-Cooking oil 2 tbs
-Makhan (Butter) 2 tbs
-Pyaz (Onion) chopped ½ Cup
-Mushroom sliced ½ Cup
-Maida (All-purpose flour) 2 tbs
-Yakhni (Stock) 2 Cups Substitute: 1 stock cube dissolve in 2 Cups of water)
-Namak (Salt) ½ tsp or to taste
-Paprika powder ½ tsp
-Kali mirch powder (Black pepper powder) 1 tsp
-Dried rosemary 1 tsp
-Dried thyme 1 tsp
-Sundried tomatoes chopped 2 tbs (optional)
-Olper’s Cream ¾ Cup (room temperature)
-Fresh basil chopped
Directions:
-Cut garlic bulb in half from the center & set aside.
-On a greased cast iron pan,place chicken pieces (skin side down),garlic bulb (open side up),sprinkle salt, black pepper crushed,dried oregano & cook on medium flame for 3-4 minutes then flip sprinkle salt, black pepper crushed,dried oregano,cover & cook on low flame until done (5-6 minutes),turn sides in between & set aside.
-In the same pan,add cooking oil,butter & let it melt.
-Add onion & sauté until translucent.
-Add mushrooms & sauté for 1-2 minutes.
-Add roasted garlic pulp & mix well.
-Add all-purpose flour,mix well & cook for a minute.
-Gradually add stock while mixing,mix well & cook for 2-3 minutes.
-Add salt,paprika powder,black pepper powder,dried rosemary,dried thyme,sundried tomatoes,mix well & cook for 1-2 minutes.
-Turn off the flame,add cream & mix well.
-Turn on the flame,add cooked chicken thighs,sprinkle fresh basil leaves & serve!
