How To make Chicken and Mushrooms In a Tarragon Sauce
2 ea Whole chicken breasts,
- skinned and boned 1 1/2 c Fresh mushrooms, sliced
2 T Oil
1 c Whipping cream
2 t Flour
1/4 t Salt
1/4 t Dried tarragon, crushed
4 c Rice, cooked
Cut chicken into bite size pieces, and cook along with the mushrooms in the oil in a skillet over medium heat. Stirring often until chicken is done, drain, discard the drippings and set aside. Keepthe chicken and mushrooms warm. Stir together the whipping cream and flour, and in the same skillet combine the with the salt and tarragon. Cook and stir until thick and bubbly, and return chicken and mushrooms to skillet. Cook and stir until heated through, and serve over hot rice. serves 4

Quick, Easy & Impressive Creamy Tarragon Chicken
Seasoned pan-fried chicken breasts in a delicious creamy tarragon sauce. Quick and easy to prepare, it's a great comfort food dinner, ready in less than 30 minutes.
It works equally well for a speedy mid-week meal, or for a special weekend or date-night dinner.

Ingredients:
▢2 tbsp olive oil
▢4 chicken breasts - (about 175g each)
▢½ tsp salt
▢½ tsp black pepper
▢1 small onion - peeled and finely diced
▢2 minced cloves garlic
▢120 ml (½ cup) white wine - *see note for non-alcohol version
▢120 ml (½ cup) chicken stock - (water + 1 stock cube is fine)
▢1 tsp dried tarragon - or 2 tbsp finely chopped fresh tarragon
▢180 ml (¾ cup) double (heavy) cream
To serve:
▢Small bunch of fresh tarragon - roughly torn
▢Black pepper
INSTRUCTIONS:
1. Heat the oil in a large frying pan over a medium-high heat.
2. Take the chicken breasts and sprinkle the salt and pepper over both sides.
3. Add the chicken breasts to the pan, and cook for about 3 minutes one side, until sealed and golden.
4. Turn the chicken over and move them to one side of the pan.
5. Add the onions and garlic, and cook for 3-4 minutes, stirring the onions often, until the onions are soft.
6. Add in the white wine, and allow to simmer for 3-4 minutes, until the wine has nearly all evaporated.
7. Add the chicken stock and dried or fresh tarragon, then pour in the cream.
8. Stir together and bring to the boil.
9. Simmer gently for 6-8 minutes, until the sauce has thickened, and the chicken is completely cooked through.
10. Serve the chicken and sauce sprinkled with a little more fresh tarragon and black pepper.

Ingredients for steak:
Chicken fillets 4
Salt to taste
Black pepper 1 tsp
Oil 1 tbsp
Ingredients for mushroom sauce:
Milk 1 cup
Cream 1 cup
Mushroom slices 1 cup
7up 1 cup
Demi-glace powder 3 tbsp
Black pepper 1/2 tsp
Salt to taste
Oregano 1/2 tbsp
Garlic (chopped) 1 tbsp
Butter 1 tbsp
Ingredients for mashed potatoes:
Potatoes (mashed & boiled) 1/2 kg
Cheddar cheese 1 cup
Black pepper 1/4 tsp
Milk 1/2 cup
Butter 2 tbsp
Sideline veggies:
Carrots 1 cup
Broccoli 1 cup
Peas 1/2 cup
Fresh beans 6-7
Salt to taste
Black pepper 1/4 tsp
Directions for chicken fillets:
In a bowl add chicken fillets, salt, black pepper and oil. Marinate it for 10 to 15 minutes.
Heat up a grill pan; grill marinated chicken fillets from each side for 4 to 5 minutes. Set aside.
Directions for mushroom sauce:
In a pan add butter, then add garlic and sauté it for a minute.
Then add mushrooms and cook for 1 to 2 minutes on medium low flame.
Now add milk, black pepper, salt, demi-glace powder, oregano and cook for 1 or 2 minutes.
Add 7up, mix it well and cook for 2 to 3 minutes.
Lastly add cream; mix it well and cook for 4 to 5 minutes or until you reach your desired consistency.
Your mushroom sauce is ready. Set aside.
Directions for cheesy mashed potatoes:
In a pan add butter, milk, cheese and whisk it well until dissolved.
Then add mashed potatoes, black pepper and mix it well on high flame.
Keep stirring until they are soft and fluffy. Your mashed potatoes are ready. Set aside.
Directions for veggies:
In a pot add water; turn the flame off once the water starts boiling.
First add carrots and take it off after two minutes. Then add broccoli, peas and lastly add French beans.
In a pan add blanched veggies, salt, black pepper and toss on high flame for 2 to 3 minutes.
Assembling:
In a plate place grilled chicken fillet and drizzle mushroom sauce on top.
Serve with mashed potatoes and veggies. Your tasty steak is ready to serve.
Preparation time: 15-20 minutes
Cooking time: 30-35 minutes
Serving: 3-4
