A recipe that celebrates chicken and tarragon (poulet a l'estragon)
This recipe celebrates the fresh herb tarragon. we use it today to make a classic French dish called poulet a l'estragon (chicken in tarragon sauce). Get the recipe:

1 medium size chicken (cut into 6 pieces)
50 ml of cognac
200 ml (0.8 cups) of dry white wine ( I used a Loire valley sauvignon blanc)
200 ml (0.8 cups) brown chicken stock
200 ml (0.8 cups) cream (heavy whipping cream)
1 carrot (cut in medium size cubes)
1 branch of celery (cut in medium size cubes)
1 large shallot (cut in medium size cubes)
1 good bunch of fresh tarragon. ( at least to have 4 tablespoons of chopped tarragon leaves and all the stokes)
Salt and pepper to season the chicken
2 tablespoons plain flour ( to dust the chicken)
2 tablespoon of oil to sear the chicken.
1 tablespoon of butter to cook the garnish.

Lemon and Tarragon Chicken
Poulet à l'estragon et au citron
How to cook chicken breast sous vide with compound butter. Essential tarragon oil. Sweet corn sautéd with red Japanese miso. How to make sauce Mentonnaise with caramelized lemon, carrot juice, orange juice, olive oil, honey and piment d'espelette.
Lemon Tarragon Chicken Salad
Yields: 4 to 6 servings
Ingredients:
¾ cup mayonnaise
1 tbsp. fresh tarragon, chopped
1 tsp. grated lemon peel
1 tbsp. lemon juice
1 tsp. salt
½ tsp. pepper
½ cup pecans, toasted and chopped
3 cups cooked chicken, chopped
2 celery ribs, finely chopped
½ small sweet onion, finely chopped
2 cups red grapes, cut in half
Preparation Directions:
~ Whisk together mayonnaise, tarragon, lemon peel, lemon rind, salt and pepper until well blended.
~ Stir in pecans, chicken, celery, and onion just until blended. Stir in grape halves.

Herb Blend for dry brine:
- 1 tsp savory
- 1 tsp thyme
- 1 tsp tarragon
- 1 tsp marjoram
(Brine for 30 minutes or overnight for optimal flavor)
Sauce:
- Olive oil
- 1/2 cup mushrooms
- 1/2 cup peas
- 3 cloves of garlic, pressed
- 1 Tbsp of butter
- 1 Tbsp of flour
- 1/2 cup heavy cream
- 1/2 cup chicken broth
- 1 Tbs Dijon mustard
- 1/2 tsp lemon zest
- salt to taste
- Parmesan & parsley to garnish

Ingredients:
Prepare Tarragon Chicken:
-Dried oregano 1 tsp
-Kali mirch (Black pepper) crushed 1 tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Tarragon leaves dried ½ tsp
-Namak (Salt) ½ tsp or to taste
-Lehsan (Garlic) crushed 1 tsp
-Lemon juice 2 tbs
-Worcestershire sauce 1 tbs
-Olive oil 2 tbs
-Boneless chicken fillet 250g
Prepare Tarragon Pasta:
-Olive oil 2 tbs
-Makhan (Butter) 1-2 tbs
-Pyaz (Onion) chopped 1 small
-Lehsan (Garlic) chopped 1 tbs
-Yakhni (Chicken stock) 1 Cup Substitute: 1 chicken cube dissolved in 1 Cup warm water
-Cream 1 Cup
-Kali mirch (Black pepper) crushed 1 tsp
-Tarragon leaves dried 1 tsp
-Namak (Salt) ½ tsp or to taste
-Parmesan cheese grated 3-4 tbs
-Penne pasta boiled as per packs instructions 200g
-Fresh parsley chopped
Directions:
Prepare Tarragon Chicken:
-In a bowl,add dried oregano,black pepper crushed,cumin seeds,tarragon leaves,salt,garlic,lemon juice,worcestershire sauce,olive oil,mix well & set aside.
-On a clean cutting board,place chicken fillet & cut from the center into two pieces.
-Cover with cling film & slightly pound fillets with the help of meat mallet.
-Add chicken fillets in marination,cover with cling film & marinate for 30 minutes.
-Grease grill pan with olive oil,place marinated fillets with marination & grill on low flame until done (7-8 minutes each side).
-Cut chicken into slices & set aside.
Prepare Tarragon Pasta:
-In a wok,add olive oil,butter & let it melt.
-Add onion & mix well.
-Add garlic,mix well & cook for a minute.
-Add chicken stock,mix well & bring it to boil.
-Turn off the flame,add cream & whisk well.
-Turn on the flame,add black pepper crushed,tarragon leaves,salt,parmesan cheese & mix well for a minute.
-Add boiled pasta & give it a good mix.
-In a serving bowl,add tarragon pasta,tarragon chicken,garnish with fresh parsley & serve!

-Clean cutting board per chicken fillet rakh dein aur center mein sa two pieces mein cut ker lein.
-Cling film sa cover karein aur meat pounder ki madad sa fillets ko slightly pound ker lein.
-Chicken fillets ko marination mein dal dein,cling film sa cover karein aur 30 minutes kliya marinate ker lein.
-Grill pan ko olive oil sa grease karein,marinated fillets ko marination ka saath dal dein aur halki ancch per grill ker lein (7-8 minutes each side).
-Chicken ko slices mein cut ker lein & side per rakh dein.
Prepare Tarragon Pasta:
-Karahi mein olive oil aur makhan dal ker melt ker lein.
-Pyaz dal ker ache tarhan mix karein.
-Lehsan dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Yakhni dal ker ache tarhan mix karein aur ubal anay dein.
-Chulha bund ker dein aur cream dal ker ache tarhan whisk ker lein.
-Chulha on karein,kali mirch crushed,tarragon leaves,namak aur parmesan cheese dal ker ek minute kliya ache tarhan mix ker lein.
-Boiled pasta dal ker ache tarhan mix karein.
-Serving bowl mein tarragon pasta aur tarragon chicken dal dein aur fresh parsley sa garnish ker ka serve karein!
