Baked Chicken Thigh Recipe:
Ingredients:
4 chicken thighs bone-in and skin-on (about 1 1/2 pounds)
2 tbsp olive oil
1 oz taco seasoning or any other seasoning blend of your choice (for a homemade seasoning, see recipe in the notes)
1 1/2 tsp salt NOTE: Skip salt if your taco seasoning already has salt.
Freshly ground black pepper to taste
2 tbsp honey : OPTIONAL (skip the honey if you're on a keto diet, or you can use sugar-free honey)
1 lemon
2 tbsp parsley chopped (OPTIONAL)
Instructions for how to cook chicken thighs in the oven:
1. Start by preheating the oven to 425°F (220°C) for about 20 minutes. Choose thighs that are similar in weight to bake at the same time.
2. Brine them in salty water for at least 15 minutes if you have time to do so; otherwise, skip this step. Make sure to pat them dry very well; otherwise they won’t get a golden and crispy skin!
3. Brush the chicken thighs all over with oil, season them well on all sides with the taco seasoning and salt. If possible, gently lift the skin to scrub a little bit of oil and seasoning under, especially if you usually remove the skin of the thighs before eating.
4. Then sprinkle pepper and brush honey on the thighs. Grease a baking sheet or baking dish with a bit of olive oil (or line one with foil and then grease). Place the thighs on the pan/dish and transfer to the middle rack of the preheated oven.
5. How long to bake chicken thighs: Bake them for 30 to 40 minutes, depending on the size of the thighs: 3-4 oz (30 minutes), 5-6 oz (35 minutes), and 8 oz (40 minutes). Take them out of the oven when they reach 160°F (71°C). Of course you can bake them without skin, but it won’t be as crispy and flavorful. The skin contains fat which flavors and moisturize the meat itself while baking.
6. Let the crispy baked chicken thighs rest for 3-5 minutes before serving. The internal temp will rise during this time, reaching around 165°F (74° C). Squeeze lemon on top and garnish with chopped parsley.
Homemade taco seasoning recipe:
Mix together 4 tsp of paprika, 2 tsp of garlic powder, 1 tsp of brown sugar (skip the sugar if you are on a keto diet, or sub with dried herbs such as oregano or thyme), 2 tsp of onion powder, 1 tsp of salt, ½ tsp of ground cumin, and 1 tsp of black pepper. If you enjoy spicy food, mix in ½ tsp chili powder or cayenne.
You may also use any dry rub of your choice– about 3 tbsp for 4 medium/large thighs.

Drop of oil
1 tsp salt
2 tsp garlic powder
1 tsp all purpose seasoning
1 tsp savory ahd cumin seasoning (optional)
1 tsp paprika
1 orange sliced
For Glaze
2 oranges
1 tsp butter
1/2 tsp salt, parsely, all putoose seasoning, paprika
2-3 tbsp honey or sugar
1/2tsp cornflour + water to make slurry
Parsley to garnish

INGREDIENTS FOR TANDOORI STYLE: HALF CHICKEN
1/2 CUP PLAIN YOGURT
JUICE OF 1/2 LEMON
CHILI POWDER PEPPER
1 TO 2 TEASPOON GARAM MASALA
1 TO 2 TEASPOON TURMERIC
1 TEASPOON CUMIN ( I USED ROASTED )
1 TEASPOON BLACK PEPPER
1 TO 2 TABLESPOON OLIVE OIL
SALT ( APPROX 1 TO 2 TEASPOON) ADJUST TO TASTE/PREFERENCE
FRESH GARLIC
FRESH GINGER
THYME
GREEN ONIONS/SCALLIONS ( ADD THIS IN THE PAN BEFORE BAKING)
YOU CAN COMBINE ALL THE ABOVE INGREDIENTS, OR YOU CAN RUB THE OLIVE OIL FIRST ONTO THE CHICKEN.
BEST TO MARINATE OVERNIGHT OR AT LEAST 2 HOURS.
LET THE CHICKEN REST OUTSIDE THE FRIDGE FOR ABOUT 30 - 45 MINUTES BEFORE PUTTING IT IN THE OVEN ( MEAT COOKS BEST AND EVENLY)
COOK AT 350 DEGREES FOR 1 HOUR, REMOVE COVER AND COOK FOR AN ADDITIONAL 30 - 35 MINUTES. ( SOME CHICKEN MAY BE TOUGHER SO USE JUDGMENT)
REMOVE AND LET CHICKEN REST FOR 30 MINUTES BEFORE CUTTING.
CITRUS BLEND CHICKEN:( FOR 1/2 )
2 TABLESPOON ORANGE JUICE
2 TABLESPOON LEMON JUICE
1 TEASPOON PAPRIKA
FRESH GARLIC ( POWDER IS OK TOO)
SALT ( TO TASTE/PREFERENCE)
1 TEASPOON BLACK PEPPER
1 TABLESPOON SALT FREE DASH LEMON PEPPER.
OLIVE OIL
LEMON, SCALLIONS/GREEN ONIONS, THYME ( ADD THIS TO THE PAN BEFORE BAKING)
