How To make Chicken Salad Delight
3 c Water
1/2 c Medium Pearled Barley*
Quaker Scotch Brand 1 ts Instant chicken bouillon
:
granules 1/2 ts Salt (optional)
2 c Chopped cooked chicken
2 c Halved seedless grapes
-- red or green 1/2 c Chopped celery
1/4 c Chopped walnuts
3/4 c Mayonnaise or salad dressing
1 tb Milk or water
1 ts Curry powder (optional)
Bring water to a boil; stir in barley, bouillon granules, and 1/4 teaspoon salt. Reduce heat. Cover; simmer 50 to 60 minutes or until tender, stirring occasionally. Drain; cool. Combine cooked barley, chicken, grapes, celery and walnuts. Combine remaining 1/4 teaspoon salt with remaining ingredients; mix well. Pour over barley mixture, tossing lightly. Cover; chill. Serve in cantaloupe halves or on lettuce leaves, if desired. Seven 1 Cup Servings *NOTE: To substitute 2/3 cup Quaker Scotch Brand Quick Pearled Barley, decrease water to 2 cups and cooking time to 10 to 12 minutes. Proceed as recipe directs. 1/2 teaspoon Salt

1 teaspoon Chilli flakes

For the salad:
1/2 cucumbers chopped
1onion, chopped
4-5 leaves Lettuce, chopped
1 medium tomato
2 to 3 olives
For the dressing:
1/4 cup Mayonnaise, low fat
1/4 cup Greek yogurt, low fat
1/2 tea spoon pepper powder
2 1 tea spoon apple cider vinegar
1/2 tea spoon Salt or as per to taste
1/2 tea spoon of parsley

Chinese Chicken Salad with Fried Noodles | Spicy Asian Chicken Salad | Shredded Chicken Salad with Asian Dressing

Chinese Chicken Salad Ingredients:
To shred the chicken:
• 1 bay leaf
• 1/2 inch cinnamon
• 10-12 black peppercorns
• 300-gram boneless chicken breast
To make Asian dressing:
• 3 tbsp olive oil
• 2 tbsp rice wine vinegar
• 1.5 tbsp light soy sauce
• 1/2 tsp fresh ginger paste or grate it
• 1 tsp garlic, finely chopped
• 1 tsp black pepper, crushed
• 1 tbsp honey
• 1 tbsp chili garlic sauce
To make the salad
• 3 cups Chinese cabbage, finely shredded
• 1.5 cups purple cabbage, finely shredded
• 1 cup carrot, finely julienned
• 1.5 cups chicken, shredded
• 1/4 cup shallots
• 1 cup fried noodles
• 1/4 cup cilantro, finely chopped
• 1 tbsp roasted sesame seeds
Step by step instructions to make Chinese chicken salad
To shred the Chicken:
• Boil enough water with bay leaf, cinnamon, black peppercorns, and salt.
• Add boneless chicken breast. Cook it for 15 minutes on high heat.
• Remove the chicken. You can use the water to make soup.
• Let it cool down completely. Shred the chicken.
To make the salad dressing:
• In a bowl, add the salad dressing ingredients. Stir to combine. Salad dressing is ready. Keep it aside.
To make the salad:
• In a big bowl, add the salad ingredients.
• Stir the salad dressing and toss to combine.
• Taste & adjust the seasoning.
• Garnish with some fried noodles and roasted sesame seeds.
• Chinese Chicken Salad is ready to serve.
