FRENCH CHICKEN
Preparation Time : 45 minutes
Serves : 4 people

Ingredients:
* 1/2 boneless chicken
* 1.5 tbsp ginger garlic paste
* 1 tsp pepper
* 3/4 tsp salt
* 1/2 tsp red food colouring
* 1 tsp cornflour
* 1 tsp maida / all purpose flour
* 1 egg
* 2 tbsp oil
* Chopped 8 green chillies
* Curry leaves
* 1 cup curd
* 1 tbsp red chilly powder
* 2 tbsp tomato sauce
* Chopped spring onions
Method:
First strain 1/2 kg boneless chicken completely as there might be excess of water in the chicken and rest it for 30 minutes.
In a bowl add 1.5 tbsp ginger garlic paste, 1 tsp pepper powder, 3/4 tsp salt, 1/2 tsp red food colouring, 1 tsp cornflour, 1 tsp maida/ all purpose flour, 1 egg and mix well, add the strained chicken and mix well and refrigerate for 1 hour.
In other pan add oil and marinated chicken and fry until cooked.
In another pan add 2 tbsp oil, chopped 8 green chillies, curry leaves and fry for 2-3 minutes, add 1 cup curd, 1 tbsp red chilly powder and a pinch of salt and cook for 5 minutes on low flame, add 2 tbsp tomato sauce and mix well and add fried chicken and give a good mix. Add 2 tbsp of water if required. Finally garnish with chopped spring onions. HOT AND SPICY FRENCH CHICKEN IS READY TO SERVE!!

One Pan Chicken Fricassée a French Chicken Stew
A one pan French chicken stew made with very basic ingredients. The term “Fricassée” means to fry and to break in pieces. The chicken is first browned in butter then braised in wine, chicken stock and slow cooked. It’s simple to make, and anything that only uses one pan is always a bonus. You can make it a day ahead as it will taste even better the following day. The flavours seems to develop even further. It’s easy to reheat, simply add a little water and use a saucepan with lid over very low heat. Chicken Fricassée is best served with rice, as it has a lot of sauce for the rice to absorb.
I strongly recommend that you buy a whole chicken and break it down yourself. If you don’t know how, see my video or get your butcher or poultry shop to do it for you. Make sure you keep the carcass for your stock. Making your own stock makes a world of difference to this dish.
Chicken Fricassée is a delicious meal that doesn’t require a lot of complicated ingredients and simple to make.

2 1/2 Tbsp (35g) - Unsalted Butter
4 - Large Brown (Yellow) Onions, Thinly Sliced
1/4 Cup (60ml) - White Wine or Beef Stock (alcohol substitute)
6 - Sprigs Fresh Thyme
5 - Dried or Fresh Bay Leaves
1/3 Cup (80ml) - Beef Stock
2 tsp (10ml) - Balsamic Vinegar
2 tsp (10ml) - Worcestershire Sauce
3 - Garlic Cloves, Grated
Seasoning To Taste
Chicken & Seasoning & Cheese -
3 tsp (15ml) - Olive Oil (2 tsp - 10ml separated)
2-3 - Chicken Breast, Butterflied & Halved
1 tsp (2.5g) - Onion Powder
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Smoked Paprika
Seasoning To Taste
Gruyere Cheese, Grated
Parmigiano Reggiano Cheese, Grated
Green Beans (Optional) -
1 Tbsp (20ml) - Olive Oil
300g (10.5oz) - Green Beans, Trimmed & Cleaned
1 - Garlic Clove, Grated
