Ingredients:
Tortilla - 4 each, Chicken breast - 180g, Refried beans - 50g, Spicy tomato sauce - 50g, Peppers green and red - 1/2 each, Onion sliced - 1 small, Garlic - 1 clove, Fajita seasoning - 1 tbsp, Freshly roasted crushed cumin - 1 tsp, Paprika - 1 tsp, Chopped coriander - 10g
Served with shredded lettuce, guacamole and tomato salsa

Mexican chicken fajita, chicken fajita recipe with Guacamole, cheese in fajita bread roll.
Mexican chicken fajita recipe, with juicy and moist chicken pieces, marinated in a mix of wonderful spices, served on fresh lettuce, topped with our Guacamole sauces, light and delicious Emmental cheese and rolled in a thin Mexican fajita bread. The perfect meal or snack that is delicious and healthy and super easy.
The ingredients for our recipe are:
750 gr of chicken breast, cut in medium to large bite sizes.
1/2 lemon juice
30 ml of olive oil
The spices are:
1 spoon of: salt, garlic powder, sweet paprika, chicken mixed spices, curry powder.
1/2 spoon of coriander seeds
Fresh lettuce, tomatoes slices
Emmental cheese slices
Into a glass tray, we place our chicken, the spices, the lemon, the oil, and we mix all the ingredients together, and then we place in the fridge for several hours, in order to fuse all together.
Into a non stick pan, we add a dash of olive oil, and we sauté our marinated chicken, covering the lid, and cooking for 5 minutes on high heat, till golden color, then we set aside, and we serve onto our fajita roll.
Onto our fajita bread roll, we lay several pieces of fresh crunchy lettuce, followed by the tomatoes, the Emmental cheese, then a layer of freshly made guacamole sauce, and finally topping it all with the crispy hot chicken, then we roll close the fajita, and we serve and enjoy.

Chicken Fajita tutorial
Ingredients
1 Chicken Breast
1 Sliced Peppers
1 Onion
½ tin tomato
1 Tsp Paprika
½ Red Chilli
Fresh Coriander
2 Tortilla Wraps
1 Tbsp Oil
1 small pot of Sour Cream or mayonnaise
Method
1. Slice Chicken into thin strips and place onto a plate. Wash chopping board and knife.
2. Finely slice onion, red chilli and peppers.
3. Heat oil in pan and gently fry onion until softened.
4. Turn up heat and add peppers and chicken. Fry until chicken is golden brown.
5. Add Chilli and Paprika and fry for 1 minute.
6. Add tomatoes and simmer until chicken is cooked through and the sauce is reduced
7. Remove from heat and add fresh coriander
8. Spread a little sour cream on wrap and top with filling, roll up and serve.

Ingredients
1) Chicken Fajita:
- Chicken Breast – 500 grams
- Red Pepper – 1” Piece
- Yellow Pepper – 1” Piece
- Red Onion – 1” Piece
2) Marination:
- Olive Oil – 2 Table Spoons
- Smoked Paprika – ½ Tea Spoon
- Chili Powder – ½ Tea Spoon
- Cumin – ½ Tea Spoon
- Lime Juice – ½ a Lime
3) Mole Sauce:
- Olive Oil – 2 Table Spoons
- Ripe Tomatoes – 2” Pieces
- Chipotle Paste – 2 Table Spoons (can be substituted with chili paste)
- Cinnamon – ½ Tea Spoon
- Cumin – 2 Tea Spoons
- Smoked Paprika – ½ Tea Spoon
- Water – ½ Cup
- Cacao – 15 grams (can be substituted with grated dark chocolate)
4) Other:
- Tortilla Wrap
- Plain Yogurt
- Fresh Coriander (Optional)
- Pico de gallo (Optional)
- Guacamole (Optional)
Preparation:
1) Fajita Mixture:
- Add the olive oil, smoked paprika, chili powder, cumin, and lime juice to a large mixing bowl.
- On a chopping board, cut the red and yellow pepper to 1 cm strips and add them to the bowl. Make sure to remove all the white bits and the seeds inside the peppers which can be slightly bitter.
- Slice the red onion and add it to the mixture.
- On a new chopping board, get the chicken breast and cut them into strips. Combine with the rest of the ingredients and mix until fully incorporated.
2) Mole Sauce:
- Heat 2 tablespoons of olive oil into a saucepan.
- Dice up the tomatoes and add them to the saucepan. Add the chipotle paste, cinnamon, cumin, and smoked paprika. Mix and let cook for 2 to 3 minutes.
- Add half a cup of water to the mixture and allow it to cook down to reduce the sauce.
- Turn off the heat and remove the saucepan.
- Add 15 grams of cacao, mix, and set aside. The cacao will give a depth of flavor to the mole sauce.
Process:
- Heat 2 tablespoons of olive oil into a pan on high heat.
- Add the fajita mixture to the pan and allow to cook on high heat for 5 to 6 minutes or until you have a sear on the chicken and the vegetables. It is very important to add the chicken into batches to avoid boiling the chicken.
- Reduce the heat, flip the chicken, and allow to cook for an additional 8 to 10 minutes or until fully cooked.
- Heat a tortilla wrap on the stove or in the microwave.
- On the tortilla wrap, add the mole sauce, the chicken mixture, the plain yogurt.
- Add lime juice and serve.
Optional:
- You can also add to the wrap pico de gallo, guacamole, and fresh coriander.
