Preparation of the Curry
2-3 tbsp Oil
2-3 tbsp Ghee
1 tbsp Ginger-Garlic Paste
500 gms Chicken
2-3 Green Chillies (sliced)
2 Onions (sliced)
3 Tomatoes (chopped)
1/2 tsp Turmeric Powder
2 tbsp Red Chilli Powder
1 & 1/2 tbsp Coriander Powder
1 tbsp Cumin Powder
1 tbsp Garam Masala Powder
Salt (as required)
Black Pepper Powder (as required)
Water (as required)
2 tsp Curd
2-3 tbsp Cream
1 tbsp Butter
1 cup Coriander Leaves (chopped)
Ginger Juliennes (for garnish)
Tomato Juliennes (for garnish)
Mint Leaves (for garnish)

Ingredients for the chicken curry:
2 tbsp vegetable oil
3 chicken breasts - - (approx 500g/17.5 oz) chopped into bite-size chunks
1 large onion - (or 2 small) peeled and finely chopped
2 cloves garlic - minced
2 tsp minced ginger
2 tbsp mild curry powder- go hotter if you prefer
1 tbsp ground coriander
½ tbsp ground cumin
1 tsp paprika
½ tsp ground cinnamon
1/2 tsp salt
½ tsp black pepper
2 tbsp tomato puree/paste
14 oz (400g) tin finely chopped tomatoes
1 cup (240ml) chicken stock
14 oz (400ml) tin full fat coconut milk
1 tbsp cornflour mixed with 2 tbsp cold water to make a slurry - *optional*
2 packed cups (60g) baby spinach
To Serve:
Boiled rice
Fresh coriander
Chilli flakes

TASTY PINOY STYLE CREAMY CHICKEN CURRY! EASY TO COOK!
This is a creamy version of chicken curry that is very easy to cook and the ingredients are very simple and easy to find.
Chicken Curry Ingredients:
1 kilo chicken your choice of cuts (e.g. legs, wings or thigh) or 1 whole dressed chicken
2 large onions quartered
3 pcs red and green bell peppers cut into strips
3 stalks celery cut 1 inch long
3 pcs medium sized potatoes cut into large cubes and fried
2 Tbsp. curry powder
1/2 tsp. ground pepper
1 tsp. MSG or granulated seasoning optional
1 Tbsp. patis
1 tsp. salt
4 cloves garlic crushed
1 cup coconut milk or evaporated milk
1/2 cup water

Tasty Kerala Style Chicken Curry - Varutharacha Chicken Curry
Ingredients
Chicken – 1 kg
Onion -3 nos
Green chilli – 2 nos
Tomatoes -2 nos
Ginger -1 nos
Garlic – 8 to 9 nos
Curry leaves – 3 sprigs
Grated coconut -1 cup
Red chilli powder – 2 tbsp
Coriander powder – 1 tbsp
Turmeric powder – ½ tbsp.
Cardamom- 2 nos
Cinnamon – 1 nos
Cloves- 2 nos
Pepper seed – 1 tsp
Fennel seed – 1 tsp
Salt – 1 o2 tsp
Oil – 2 or 3 tbsp
Method
Heat oil in a pan add cardamom, cinnamon, cloves, pepper seed and fennel seed saute them well.
Add grated coconut and saute them well.
Then add some redchilli powder , coriander powder and turmeric powder ,roasted them well and set
aside.
Grind the roasted coconut and other ingredients into fine paste and set aside.
Again grind ginger and garlic into fine paste and set aside.
Heat oil in a pan add fennel seed ,lets crackled .
Add chopped onion saute for 2 to 3 minutes.
Add grinded ginger garlic paste,green chilli and curry leaves saute them well.
Add chopped tomatoes and salt saute them well.
Cover and cook till the tomatoes become soften.
Add grinded coconut masala and mix them well.
Then pour some water into the masala bowl and add the water into curry pan.
Add sufficient amount of water into the pan ,cover and boil them well.
Add cleaned chicken pieces mix them well.
Cover and cook till the chicken become soften .
Remove from fire and set aside.
Serve the tasty curry with meals.

Ingredients for Simple Chicken Curry:
- Chicken- 1 kg
- Onion, rough chopped- 4 medium
- Ginger, crushed- 2 tsp
- Garlic, crushed- 2 tsp
- Tomatoes, roughly chopped- 3 medium
- Green chillies, thick chopped- 3 nos.
- Turmeric powder- 1/2 tsp
- Red Chilli Powder- 1.5 tsp
- Readymade Chicken Masala- 1 tbsp (store bought)
- Salt- 1.5 tsp
- Refined Oil- 4-5 tbsp
Preparation:
- Clean & wash the chicken pieces and keep it to drain.
- Roughly chop the onions, tomatoes and green chillies.
- Peel and crush the ginger and garlic cloves.
Process:
- Heat oil in a pan or kadai and add the chopped onions.
- Fry on high heat for 10 mins till brown in colour.
- Add the crushed ginger and garlic and fry on medium heat for 2 mins.
- Add the chopped tomatoes and green chillies and fry on medium heat for 2 mins.
- Add the turmeric powder and mix & fry on medium heat for around 3 mins till tomatoes are soft.
- Now add the chicken pieces and fry on high heat for 2-3 mins till the chicken pieces are browned.
- Add the readymade chicken masala, red Chilli powder and salt, mix and bhunno on high heat for 5 mins. Continue to fry on medium heat for another 5 mins.
- Now add 200 ml water and cook on low heat for around 20 mins till the chicken pieces are tender and oil separates.
