How To make Chicken Curry In a Hurry
3 tablespoons butter
4 whole chicken breast halves without skin -- boned
4 teaspoons curry powder
3 tablespoons brandy
2 teaspoons flour
1/2 cup chicken broth, fat free
1/2 cup nonfat sour cream
3 tablespoons mango chutney
Melt butter in heavy medium skillet over medium-high heat. Season chicken with salt and pepper and saute until just cooked through - about 5 minutes per side. transfer chicken to a plate.
Pour off all but 1 tablespoon dripping. Add curry powder to skillet and stir until fragrant - about 30 seconds.
Add brandy and cook until almost evaporated, standing back in case brandy ignites. Mix in flour. Add broth, cream and chutney and stir until smooth.
Increase heat and boil 2 minutes, stirring constantly, until sauce coats spoon lightly. Return chicken and any collected juices to skillet. Cook just until chicken is heated through - about 2 minutes. Season with salt and pepper to taste.

3/4 kg chicken
400 ml coconut milk
220g canned peas (optional)
2 small carrots
2 medium potatoes
1 medium onion
3 cloves garlic
2 laurel leaves
1/2 tsp salt
1/2 tsp pepper
1/2 cup water
1 small bell pepper
1 tbsp white sugar
1/2 cup curry power (you can add more if you want it extra spicy)
2 tbsp oil

Ingredients:
1kg chicken breast fillet cubed into medium pieces
1 cup (250g) of shop bought pre fried onions
1/3 cup oil
2 fresh tomatoes cut into wedges
1/3 cup yoghurt (80g)
2 teaspoons salt
1/2 tablespoon of coriander powder
1 tablespoon of deghi mirch (kashmeri chilli powder) and garam masala
1 teaspoon of regular chilli powder
1/2 teaspoon turmeric powder
1 frozen peice each of ginger and garlic
1 heaped tablespoon cumin seeds
2 mug (500ml) boiled kettle water

A flavorful chicken gravy dish that comes together in less than 30 minutes and can be made with minimal ingredients. No tricky masalas or marination involved. Just throw all the ingredients together in a pot, simmer and serve!

Ingredients for Chicken curry in a hurry:
Boneless Chicken – small pieces 250 grams
Cumin seeds – ½ Tsp
Black peppercorns – 5
Cloves – 3
Cinnamon – ½ inch piece
Cardamom – 2
Fried Onion – ½ Cup
Tomato – 1 finely chopped
Green chilli – 1 finely chopped
Ginger-Garlic Paste – 1 Tbsp
Yoghurt – 2 Tbsp
Salt – 1 Tsp
Coriander Cumin Powder – ¾ Tsp
Red chilli powder – ½ Tbsp
Turmeric Powder – ½ Tsp
Garam Masala Powder – ½ Tsp
Cream – 2 Tbsp (Optional)
Cilantro – to garnish
Water – ½ Cup
Method:
1. Heat oil in a pan on high heat.
2. Add whole spices (black peppercorns, cloves, cinnamon and cardamom)
3. Now add cumin seeds.
4. Add boneless chicken pieces and cook well until translucent.
5. Add salt, ginger garlic paste, mix well.
6. Now add fried onions, chopped tomato, turmeric, coriander cumin powder and red chilli powder. Stir well.
7. Now add yoghurt, stir and add water.
8. Cover and cook for 15 minutes on medium heat.
9. Now add garam masala, cilantro (fresh or frozen) and cream. Stir well.
10. Cover and cook for 5 minutes on medium heat.
11. Serve hot with rice, rotis or naans!
