How To make Chicken Breasts with Prawn& Saffron Sauce
CHICKEN brEASTS :
250 g Uncle Ben's Thai Imperial Rice
4 chicken breasts skinned and boned
45 g butter
:
PRAWN & SAFFRON RICE 1/2 small onion :
peeled and chopped
1 tsp saffron ...or...
4 strands saffron
4 tbsp white wine
120 ml chicken stock
300 ml whipping cream
55 g unsalted butter :
cut into small cubes
110 g peeled prawns
30 g butter
2 tomatoes peeled deseedd diced
salt and freshly ground black pepper :
to taste
1. Heat the butter and 1 tbsp of water in a large pan and fry the chicken until coloured. Set aside and keep hot.
2. Simmer the wine with the onion in a small pan until reduced by half. Add the saffron, stock, meat juices and cream. Continue to simmer until the sauce is reduced by 1/3 and has thickened.

I should start by saying that is not what is traditionally thought of as a paella, because there's no seafood involved. However, not everyone in my family likes seafood so this is quite a good adaptation that is great for everyone! You can use leftover chicken or fresh and the chorizo provides a really nice kick! Best enjoyed with a glass of wine on a sunny summers' evening. Have a go, and let me know how you get on in the comments below!
To follow this video you will need:
(Serves 4)
1 large frying pan
1 measuring jug
1 chopping board
1 sharp knife
1 tablespoon olive oil
1 large leek/ onion (chopped)
2 cooked chicken breasts (chopped)
200g chorizo (diced)
2 teaspoons paprika
1 teaspoon turmeric
250g long grain rice
1 litre of chicken stock
75g frozen peas
2 lemons

Really good Fish Cakes
You'll find faster fish cake recipes out there. But these ones are particularly good! The trick is to keep potato chunks and big flakes of fish rather than letting it turn into mush. And the garlic-chilli-green onion-thyme sautéed in butter that's mixed through the potato is just divine!
