Tomato and Garlic Braised Chicken Thighs

PREPARATION TIME: 10 minutes
COOKING TIME: 20-25 minutes
SERVINGS: 5 servings
INGREDIENTS:
750g/26.5oz chicken thighs, skin removed
400g/14oz diced tomatoes
50g/1.75oz garlic, crushed
7g/0.25oz fresh tarragon
15ml/0.5fl oz olive oil
250ml/8.5fl oz water or stock
salt and pepper, to taste
METHOD:
1. Season chicken thighs with salt and pepper on both sides.
2. Heat oil in a braising pan.
3. Sear chicken thighs until brown on both sides.
4. Add garlic into the pan and roast until slightly caramelized.
5. Add diced tomatoes and sautee briefly.
6. Add stock and bring to a simmer.
7. Add fresh sprigs of tarragon, cover, and simmer for 20-25 minutes or until chicken reaches an internal temperature of 75C/165F.

Today I'm making a delicious chicken breast recipe that is sure to please! This is a super easy one pot chicken dinner recipe that works perfectly as a meal prep option too. It is tangy, cheesy and loaded with flavour. You can add the whole chicken breast, cut it up or use shredded chicken, the sauce works with everything! The seasoning used for the chicken breast is super important and adds a delicious flavour to the sauce.
I've made a plain sauce here but you can go ahead and load it with bell peppers, mushrooms, spinach or any other veggies you like. Pair this delicious chicken breast recipe with pasta, rice or steamed veggies for the perfect weeknight meal.

INGREDIENTS:
2 large chicken breasts
2 tbsp olive oil
1 tbsp butter
4 cloves garlic
1 small onion
1/2 cup chicken stock or water
1 cup/230 ml tomato puree (fresh or canned)
1 tbsp tomato paste (sub: 1 tbsp ketchup)
1/2 cup heavy/whipping/double cream (sub: fresh cream)
Herbs (basil, parsley, cilantro or coriander)
Optional: 1/4 cup parmesan cheese (or preferred cheese)
Optional: 1 tsp chilli flakes
Optional: 1/2 tsp sugar if sauce is too sour
Seasoning:
1 tsp chilli powder
1/2 tsp black pepper powder
1/2 tsp paprika
1/2 tsp salt
2 tsp olive oil

SUBSTITUES:
No tomato puree?
- 1/3 cup tomato paste + 2/3 cup water
- 1 cup crushed canned tomatoes
What can be used instead of chicken stock?
- 1/ cup water + 1 stock cube
- Plain water
No fresh herbs?
Substitute with 1 tsp dried herbs of choice

TIPS:
• Cooking the tomato puree well enhances the flavour of the sauce
• If the sauce feels too sour, add 1/2 tsp sugar
• Adding the cheese makes the sauce even more delicious
• If you like a spicy sauce, add chilli flakes while adding the garlic

Basil Garlic Marinade Recipe:
2 lbs chicken breast
5-7 cloves of peeled garlic chopped
1/2 tsp kosher salt with the garlic
10 sprigs of fresh thyme stripped
2 oz fresh basil picked from stem
1 tsp chili flakes
1/3 cup extra virgin olive oil
Fresh lemon and Maldon salt to finish

Arrabbiata Garlic Chicken with Potatoes
Chicken breast with garlic, chili in a tomato sauce. This recipe also has the addition of potato so it’s a complete meal. You could also add chopped spinach for additional greens.
Arrabbiata translates to Angry, that’s because of the chili factor as it’s meant to be a hot spicy sauce. If you make it a day in advance, and then reheat it, it will taste even better or make extra and have a great meal the following day. The flavours seem to intensify overnight.
I also added cheese to this sauce, to bring it up a level, you can also use Parmesan cheese for this recipe, but I prefer Pecorino for this, it just gives it that little extra yumminess. Either way, I’m sure you’ll love those intense flavours. Enjoy my Arrabbiata Garlic Chicken with Potatoes.
