I wanted to share this today because quick family meals are the recipes that are most requested by my readers. I know how it goes, I’m a working mom! Even though I run restaurants and cater high-end dinners, I don’t run my home kitchen like that. When the kids return home from activities, they’re hungry and I need to serve them something filling and delicious right away.
This fun thing about this recipe is that it’s kind of a sneaky way to incorporate vegetables into their day if they haven’t had enough. My children don’t love spinach salads, but when it’s stuffed with feta into a chicken breast they’ll eat it up without a second thought. To round out the meal I often serve a rice or noodle dish on the side. Spinach and feta are a popular duo in many Mediterranean dishes. You probably think of Spanakopita right off the bat, there are other appetizers and dips that combine them as well. I don’t know the exact origin of this flavor pairing, but it works well and is found all over the world.
If you need to make this meal even quicker it’s important for you to know that you can pre-stuff the chicken and keep it in the fridge during the day. You can also cook it in advance and warm it up later if that’s easier. I’ve done that before and served it slice over salad and it tastes really good!

SPINACH AND 3 CHEESE STUFFED CHICKEN BREASTS WITH ORZO AND GARLIC PARMESAN BREAD TWISTS
Ordinarily, I'd have used ricotta for stuffing the rollatini...but today I did a cream cheese-based mixture instead...A nice switch-up from the usual ricotta filling
The orzo is so simple to make....but so delicious....and extra delicious over the wilted spinach with some of the lemon sauce spooned over the orzo when served.
The bread twists are a favorite thing around our house...
I love working with yeast for baking bread and making all sorts of dough...
But it's also really nice to have this yeast-less...no rise -time dough for the times when I want to whip up some bread twists...a few calzones etc...in a flash...without waiting for dough to rise.

Creamy Chicken Orzo
This creamy chicken orzo is a cheesy, velvety one-pot dish that’s comfort food at its best. It has tender chicken and orzo smothered in a creamy Parmesan sauce and you can have it on the table in 30 minutes!
ONE PAN CREAMY CHICKEN AND ORZO
This One Pan Creamy Chicken & Orzo is super easy to make and my kids just love it! Tender chicken breasts is served on a bed of creamy orzo that’s been cooked with chicken broth, cream and a little Parmesan cheese. And it’s soo delicious!!
Creamy Chicken and Orzo
Ingredients
2 chicken breasts (if using boneless skinless chicken thighs see notes below)
Garlic powder
Onion power
1/2 onion, diced
3 garlic cloves, minced
1 3/4 cups dry orzo pasta
3 1/2 cups chicken broth
1 cup heavy cream
1/2 cup Parmesan cheese
Optional - lemon wedges
Directions
Slice chicken breast in half lengthwise. Place parchment paper or saran wrap over the top and pound evenly. Season both sides well with garlic powder, onion powder, salt, and pepper.
Heat oil in the pan over medium high heat and cook chicken until cooked through, about 3-4 minutes per side. Remove, set aside and wipe pan clean.
Add more oil to the pan and sauté onions and garlic for 3 minutes over medium heat.
Stir in dry orzo and cook for 1 minute.
Stir in chicken broth and heavy cream.
Season with salt and pepper, and bring to a boil. Lower heat to medium low cover and cook for 12 minutes or until orzo is tender.
Remove from heat and stir in parmesan cheese and season with salt and pepper to taste.
Place chicken over the orzo and sprinkle with lemon juice if desired.
Note
Substituting boneless, skinless chicken thighs
Season 1 1/2 lbs chicken thighs with garlic powder, onion powder, salt and pepper. Sear chicken about 3-4 minutes per side (does not need to be cooked through at this point) Remove, set aside and wipe pan clean.
Cook orzo, according to the above instructions - after bringing to a boil, place chicken thighs over orzo, lower heat to medium low, cover and cook for 12 minutes until orzo is tender.
Remove from heat and remove chicken. Stir in parmesan cheese and season with salt and pepper. Return chicken back to the pan and squeeze lemon juice over the top if desired.

I use boneless, skinless chicken breast as they are healthy and easy to get, but you can use the cut of your choice. Just adjust the cooking time accordingly. You can always alter the spices to meet your tastes too. For example, if you're a garlic or oregano lover simply add more. If not, add less.
The dish goes great with a. nice salad and a glass of white wine.
