How To make Chicken, Pepper and Tomatoes (Mf)
4 large skinless boneless chicken breast halves
tenders
removed 1/4 cup olive oil
1 red bell pepper :
thinly julienned
1 carrot peeled and thinly julienned
1 stalk celery thinly julienned
1 clove garlic thinly sliced
1/2 cup dry white wine
1 cup italian canned plum tomatoes :
cut into strips
salt and freshly ground black pepper
Heat the olive oil, in a large skillet, over medium high heat. Add the chicken and saute for 2 minutes a side to add some color. Remove the chicken to a plate.
Add the bell pepper, carrot, celery and garlic to the skillet and saute, stirring continuously, for about 2 minutes or until the vegetables begin to get tender. Add the white wine and evaporate. Add the tomatoes, return the chicken on top. Cover and cook over low heat for 5 to 8 minutes or until the chicken is cooked through.
Remove the chicken and set over the warm rice salad. Adjust seasoning of the pan sauce and spoon over the top.

Low Fat Creamy Spinach and Chicken Pasta
Ingredients:
Chicken Breast
Protein Pasta
Parmesan Cheese
1/3 Less Fat Cream Cheese
Reduced Fat Milk
Minced Garlic
Yellow Onion
Roma Tomato
Green Onions
Spinach
Season All
Cayenne Pepper
Black Pepper
Parsley
Crushed Red Pepper
Garlic Powder
Onion Powder
Directions:
1. Dice 1/4 yellow onion
2. Shred parmesan cheese
3. Dice 1/4 of roma tomato
4. Chop 2 stalks of green onion
5. Boil pasta for 12 minutes or until tender (follow directions on your package)
6. Cube 2 thinly sliced chicken breast
7. Season chicken to taste
8. In a blender, add 4oz of cream cheese, 1/4 cup of parmesan cheese, 1/2 cup of reduced fat milk, and garlic powder, blend until smooth
9. In a skillet, add 2 tbsps of olive oil
10. Add onions and sauté until translucent
11. Add chicken and cook for 5-7 minutes, or until done
12. Add green onion and tomatoes
13. Add 1 tbsp of minced garlic
14. Add sauce and stir
15. Add a handful of spinach
16. Lower fire, cover, and cook for 2 minutes
17. Mix in spinach and allow sauce to simmer until it thickens
18. Add sauce to pasta
19. Garnish with red pepper flakes and parsley
20. Enjoy!
