Instant Pot Best Chicken & Dumplings

Without a doubt, the most requested recipe I had coming my way was Chicken & Dumplings. And seeing as I live with a Southerner who loves his Southern food, it's shocking it took this long to do it.
Now this Southern staple is something that always confused this Yankee by name. When I hear the word dumpling I think of Chinese dumplings filled with meat (and it makes my tummy sing). I am the self-proclaimed dumpling king and can eat them every single day.
But SOUTHERN-style dumplings are more on a spectrum. Some are fluffy like matzo balls but the most common is a ribbon-like thick noodle that practically melts in your mouth - like a creamy, Southern-style Chicken Noodle Soup. And that is the exact type of Chicken & Dumplings I wanted to make.
It took me a few attempts to work out the proper consistency for the dumplings, but a few bags of flour and a bunch of butter later, I can officially say I that I've created a version of this classic dish to make Scarlett O'Hara forget her manners and lick her bowl clean and NEVER go hungry again!

Chicken & Dumplings Recipe
This recipe is an amazing dish that I’ve made multiple times over the last couple of years. It is SUPER rich and hearty and comforting and sticks to your ribs like no other. The recipe is by chef Andrea Reusing of Lantern in Chapel Hill, North Carolina. The recipe was featured in Savuer Magazine on October 29th in 2019. Below I will put my modified recipe and at the bottom of the description is the original recipe. I’ve modified it to make it a little easier, and then also pump up the flavor for any flavor loss that I may have had by simplifying the original recipe. This dish is guaranteed to make everyone happy- I double the dumpling recipe and then at the end of the gravy/chicken being complete, I split it into two pots to cook the dumpling portion so that I’m able to have as many dumplings as possible.

Ingredients:
4 lbs. boneless, skinless chicken thighs cut into 2 inch cubes
Kosher salt & Black pepper
1/2 lb slab of bacon, sliced into slivers
2 Tbs olive oil
3 tsp dried thyme
4 cloves garlic, chopped
4 medium carrots, sliced
4 stalks celery, sliced
2 Large yellow onions, chopped
1 bay leaf
3 & 2/3 cups all-purpose flour
1.5 cups white wine
2 Tbsp baking powder
1 tsp baking soda
1 stick of melter butter- I use salted, but the recipe calls for unsalted
1 & 1/4 cup of buttermilk
1/4 cup of chopped green onion
5 Tbs chicken bouillon
Directions:
1. Mix chicken bouillon w/ 4 cups of water and set aside
2. In a large wide pot over medium heat, add bacon to pan to cook until crisp. Remove bacon (leave grease in pan) and set aside
3. Add olive oil to bacon grease and then slowly cubed chicken thigh meat to pan. Cook until it is just cooked then remove the meat from the pan & set aside while leaving all of the juices
4. Add thyme, garlic, carrots, celery, onions, & bay leaf and cook until brown (18-25 mins). I cook it even longer than that….
5. Add 2/3 cup of flour and cook for 1 min
6. Add the wine and cook for 1 min
7. Whisk in chicken stock & salt & pepper to taste
8. Add bacon and chicken meat and reduce heat to medium-low and simmer, covered for 15 minutes
While mixture is simmering….
1. In 1 bowl, whisk together 3 cups flour, baking soda, baking powder, salt, and pepper. And another bowl, combine butter, buttermilk, and green onions. Add wet mixture to dry mixture and stir together to make a thick batter.
2. Uncover pot and split gravy into two pans. Add large spoonfuls of dumplings to both pans and then cover and simmer until dumplings are cooked- about 25+ minutes.
HAVE THE BEST TIME eating this for the next couple of days!

Ingredients:
serves 6-8

2 Tbsp. canola oil
2 tsp. dried thyme
4 cloves garlic, chopped
4 medium carrots, thickly sliced (I prefer diced)
4 stalks celery, thickly sliced (I prefer diced)
2 large yellow onions, cut into 1-inch chunks (I prefer diced)
1 fresh bay leaf (I used 2)
2 2⁄3 cups all-purpose flour
1 cup white wine (I used 2 cups)
1 Tbsp. baking powder
1⁄2 tsp. baking soda
5 1⁄2 Tbsp. unsalted butter, melted and cooled slightly (I used salted and then omitted salt)
3⁄4 cup buttermilk (use more if mix is still dry)
2 Tbsp. finely chopped flat-leaf parsley (I used green onions- about 1/3 cup)
4 cups of Chicken Broth
Instructions:
In a large, wide pot over medium heat, add the bacon and cook until crisp, 8–10 minutes. Transfer to a plate, leaving the fat in the pot. Add the oil; when the oil is hot, brown the chicken. Transfer to a plate.
Add the thyme, garlic, carrots, celery, onions, and bay leaf; cook until light brown, 18–20 minutes. Add ⅔ cup flour; cook for 1 minute. Add the wine; cook for 1 minute. Whisk in the reserved broth and salt and pepper to taste. Add the chicken and bacon back to the pan. Reduce the heat to medium-low and simmer for about 20 minutes.
In a bowl, whisk together the remaining 2 cups flour, baking powder, baking soda, 1½ tsp. salt (if using salted butter, skip salt), and ¼ tsp. pepper. In a separate bowl, combine the butter, buttermilk, and green onions. Pour into the flour mixture and stir to make a thick batter.
Uncover the pot; add the reserved breast and wing meat. Drop the batter in large spoonfuls over the top. Cover and simmer until the dumplings are cooked, 20–25 minutes.
