How To make Cherry Cream Cheese Pie
1 Pie shell
-(graham cracker) 8 oz Cream cheese
1/2 c Sour cream
1/3 c Granulated sugar
1/2 t Vanilla (or to taste)
4 oz Whipped cream
14 oz Cherry pie filling
-(1 can) Cream together the cheese and sour cream. Fold in sugar gradually. Add vanilla and mix well. Fold in whipped cream. Pour into pie shell and chill for at least 3 hours. Pour excess syrup from the can of cherry pie filling. Leave some, but you certainly don't need all of it. The sauce should cover the cream cheese mix, but the cherries shouldn't be drowning in it. Pour pie filling on top. Serve cold. NOTES: * A simple cherry cream cheese pie -- My wife makes this for me periodically, and it is always delicious. No baking is required, and it is very easy to make. Yield: Makes one pie. * If you don't have the time to sit around for 3 hours waiting for the pie to chill, make the cream cheese filling the night before and let the pie chill overnight. * We prefer to use non-dairy whipped cream substitute. Ingredients
1 (8 oz.) package reduced fat cream cheese
1 (14 oz.) can Eagle Brand® Fat Free Sweetened Condensed Milk
1/3 cup lemon juice
1 teaspoon vanilla extract
1 (6 oz.) prepared reduced-fat graham cracker pie crust
1 (21 oz.) can cherry pie filling, chilled
Instructions
BEAT cream cheese in large bowl, until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla.
POUR into crust; chill 4 hours or until set. Top with desired amount of pie filling before serving.

Graham Cracker Crust
2 cups graham cracker crumbs
1/4 cup white sugar
7 tablespoons unsalted butter, melted and cooled
Filling
1 (8 ounce) package cream cheese or 1 (8 ounce) tub cream cheese spread, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup freshly squeezed lemon juice
1 teaspoon pure vanilla extract
1 (21 ounce) can cherry pie filling, chilled
1/2 teaspoon pure almond extract
Ellen’s Magic: You may use a store bought 9-Inch graham cracker crust for this recipe. You can also use blueberry, strawberry, or any kind of pie filling.
Preheat Oven to 350 Degrees
For the Crust: Crush the graham crackers until they are fine crumbs then add them into a large bowl then pour in the sugar and melted butter and stir until well combined. Pour the crust mixture into a greased 9-inch deep dish pie plate and press evenly and firmly into the bottom and sides. Bake for 7 to 8 minutes. Remove from the oven and cool completely on wire rack.
For the Filling: In a large bowl using a electric mixer, add the cream cheese and cream on medium speed until fluffy. Next add in the sweetened condensed milk and continue mixing until well combined. Add and mix in half the lemon juice then add and mix in the other half, and add in the vanilla extract and continue to mix until well incorporated. Pour the filling into the cooled crust. Place the pie into the refrigerator and let it chill overnight, until well firm and set. The next day, add the almond extract into the cherry pie filling and mix until well combined. Pour the cherry filling on top of the pie and spread evenly. Cut into desired slices, serve with whipped cream (if desired) and enjoy!

OLD SCHOOL CHERRY CHEESECAKE
This is one of the most popular desserts for Christmas
Its very easy and creamy and delicious
RECIPE:
1 1/2 cups finely crumbled graham crackers
6 tablespoons melted butter
1/4 cup sugar
1 pound cream cheese
1 tablespoon Vanilla bean paste( OPTIONAL)
1 1/4 cups Sugar
1 teaspoon Vanilla Extract
3 Large Eggs
1 cup Sour Cream
1/8 teaspoon Salt
Prepare graham cracker crust - mix together with a fork until all ingredients are moistened. Spread the mixture evenly in 10 inch pan. Using your fingertips or the flat bottom of a drinking glass, firmly press the mixture over the bottom and 1/2 inch up the sides of a pan. Freeze for 20 minutes. For a crunchier crust bake in a preheated 350 degree oven until lightly browned, 10-15 minutes instead of freezing it.
Preheat oven to 300 degrees. In a medium bowl, beat cream cheese until creamy, about 30 seconds. Do not over beat. Gradually beat in 1 cup sugar and vanilla extract. Beat in 1 egg at a time, just until incorporated, scraping the sides of the bowl and the beater after each addition. Scrape the batter into the crust and smooth the top. Place on a cookie sheet. Bake until the center just barely jiggles when the pan is tapped, 45-55 minutes.
Remove from oven and continue to cool in the pan on a rack for at least 1 hour.
Let cool completely in the pan. Cover and refrigerate for at least 3 hours preferable 24 hours, before serving.
Remove from fridge and top with cherry pie filling topping
