How To make Cheesy Tortilla Bake
TORTILLAS:
1 c Flour
1/2 c Yellow cornmeal
1/2 ts Salt
1 2/3 c Milk
1 Egg, beaten
2 ts Melted butter
FILLING:
1 lb Ground beef
1/2 c Chopped onion
1 cl Galric, minced
1 cn Tomato soup
1 cn Cream of mushroom soup
1/2 c Taco sauce
1 t Oregano
1 cn (2 1/4oz) sliced olives,
Drained 2 c Shredded cheddar cheese
Combine tortilla ingredients until smooth. Heat lightly greased small skillet over medium heat. Lifting and tilting skillet, pour in about 3 tablespoons batter for each tortilla. Brown, turn and brown other side. Repeat with remaining batter, keeping fini Brown meat, onion, and garlic until onion is tender; drain. Add soups, taco sauce, oregano and olives. Cover bottom of 12X8X2" baking dish with half a dozen tortillas, overlapping as needed. Cover with half the meat filling, Repeat layers. Cover with cheese. Bake 30 minutes at 350F. or until heated through. Let stand

PASTEL AZTECA | How To Make the best Tortilla Casserole ❤

This delicious Pastel azteca is absolutely delicious to say the least, it's layers and layers of total goodness. This traditional dish is the casserole of choice when entertaining or just wanting something hearty and delicious. I alternate layers of gently fried corn tortillas with layers of salsa Verde, poblanos strips, corn grains ,onion strips, Mexican crema and Oaxaca cheese, it is best when made with a meat ingredient, I usually choose chicken but also love it with ground beef, I bake my Pastel Azteca casserole in the oven till bubbly, then serve it with a side salad. This dish is easy and absolutely fit for a king.
INGREDIENTS-----------------------
3 Lb boneless skinless chicken thighs
6 tomatillos
5 poblanos peppers (seeds and veins removed)
2 jalapenos (seeds removed)
1/2 medium onion (julienned for sauce)
6 garlic cloves (divided)
Cilantro (medium bunch)
1 Tbsp butter
1 Tbsp olive oil
1 tsp Better than bouillon
13 corn tortillas
18 oz Oaxaca cheese (grated)
Crema (Cacique Mexican table cream)
2 C. corn
1/2 tsp oregano
1/4 tsp ground cumin
oul for frying tortillas
1 &1/2 C. Chicken broth
Salt as needed
BLENDER INGREDIENTS-------------------
Tomatillos
1 poblano pepper
cilantro
2 jalapenos
1 C. chicken broth
INGREDIENTS TO BOIL CHICKEN---------
2 Celery ribs (cut in half)
1/4 tsp peppercorns
2 garlic cloves
1-2 tsp Better than bouillon (I used 1)
water to cover chicken by 1 &1/2 inches

Cheesy Chicken Tortilla Bake
When in the mood for something savory, we often turn our heads towards Tex-Mex cuisine. And this dish truly is something to remember. Chicken is cooked with bacon and leek and set upon roasted tortilla chips and topped with some savory Cheddar cheese. It's a dish meant for the strong!

Mexican Chicken Casserole
Just 30 minutes in the oven and your family will be enjoying this delicious Mexican Chicken Casserole!

Ingredients
3 cups crushed tortilla chips or Dorito Nacho Cheese chips
15 oz. black beans drained and rinsed
2 cups chopped cooked chicken (rotisserie chicken works well)
1 teaspoon ground cumin
21 oz. cream of chicken soup 2 (10.5 oz) cans
1 10 oz. can Rotel tomatoes undrained
2 cups shredded jack cheese
2 cups shredded medium cheddar cheese
1 tomato diced
1 bunch cilantro rinsed and chopped
Jalapeños optional
Instructions
Preheat oven to 350 F and grease a 13x9 casserole dish with non-stick cooking spray.
Crush tortilla chips lightly and sprinkle approximately 1 cup across the bottom of the baking dish.
Layer diced chicken and black beans over the crushed chips.
Stir 1 teaspoon of cumin into the cream of chicken soup. Spread the soup mixture over the chicken and beans, using a spatula to gently spread it evenly over the entire top. Add canned tomatoes over the soup layer.
Sprinkle cheese evenly over the tomato layer and top with remaining crushed chips.
Bake for 25-30 minutes or until casserole is hot and bubbly and the cheese is fully melted.
Garnish casserole with cilantro and chopped tomatoes.
Serve immediately with a slice or two of fresh jalapeño.
Notes
Do not drain Rotel tomatoes before adding to casserole.
You can substitute Doritos for regular tortilla chips.
For another flavor element, mix a 4 oz. can of diced chiles into the soup/cumin mixture.
Prepare ahead of time except for the tortilla chips over the top. Cover with plastic wrap and refrigerate. When ready to bake, remove the plastic wrap and sprinkle with chips. Bake until hot and bubbly.
