Chocolate Diablo Cookies (Vegan, Gluten Free, Spicy, Tacofino Remake)
Chocolate Diablo Cookies
I have always wanted to try a Diablo Cookie from Tacofino but have never been able to... until now! These cookies are chocolatey, fudgy and have a spicy kick to them :) Thanks to my friend Ellie for showing me these can be done the gluten free vegan way! Recipe below.
Original recipe:

2 flax eggs (2 Tablespoons ground flax mixed with 6 Tablespoons water)
1 ½ cups gluten free flour blend
1 cup cocoa powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon ground cayenne pepper
1 teaspoon ground ginger
Dash sea salt
1 cup organic cane sugar (the original recipe called for 2 cups of sugar but I reduced it)
½ cup extra virgin oil (or canola oil)
1 Tablespoon pure vanilla extract
1/3 cup plant based milk (this will depend on how absorbent your gluten free flour blend is)
1 cup vegan chocolate chips or chunks (plus extra for topping)
Preheat oven to 375F and prepare 2 baking sheets with silicone mats or parchment paper.
In a small bowl whisk the flax eggs and set aside to thicken.
In a large bowl combine flour, cocoa powder, baking soda, cinnamon, cayenne, ginger and salt. Mix well, trying to get rid of any clumps (you can also sift the cocoa powder and flour).
In a medium bowl combine sugar, oil, vanilla and milk, mixing well. Add the now thickened flax eggs and stir well.
Add the wet ingredients to the dry ingredients, as well as the chocolate chunks and stir really well to combine. The batter will be thick and fudgy, you'll be able to form the dough into balls and it'll be nice and shiny.
Form the dough into large golf ball-sized balls and then flatten on the baking sheets. Top with a chocolate chunk and sea salt. Bake for 11 minutes and do not handle until cookies have cooled.
These make 12 big cookies!
