How To make Cheese Crackers
1/2 c Grated sharp cheddar cheese
1/2 c Flour, part for rolling
2 tb Margarine or butter
1/4 ts Salt
pn Paprika pn Cayenne pepper 2 tb Water
Mix all together in a bowl. Original directions suggested shaping into a roll 1 1/2 inch wide, chilling at least 2 hours wrapped in wax paper and cutting in thin slices to make 1 dozen or more crackers. This would produce neatly shaped crackers, possibly thicker than desired. By rolling very thin, this amount of dough will make small crackers about 1/2 inch apart to cover 1 1/2 small cookie sheets. They do puff up while
baking. May be cut quickly in random small shapes with a plastic knife. Suggested toppings coarse salt (made them too salty), garlic salt, celery salt, curry powder, or freshly ground black pepper. If the dough is very dry after rolling, brush tops with water before salting. If it is soft, sprinkle lightly and press the salt into the crackers. Bake 5 minutes at 425 F or until browned. Homemade Cheese Cracker Recipe- Cheese Nips & Cheez-It Dupe!
I am so excited to share with you this recipe for homemade Cheese Crackers! They are dupes for Cheese Nips and Cheez-Its! You won't believe how good they are! Here is the recipe:
8 oz. Sharp Cheddar
1/4 cup softened butter
1 1/4 cups flour
1 tsp. kosher salt
2 tbsp. olive oil
2-3 tbsp. water
Shred the cheese on the smallest size of your cheese shredder. Combine the shredded cheese and softened butter in a mixer and mix on a low setting for 4-5 minutes until combined. Add salt and flour. Mix until crumb-like in texture. Add water one tbsp. at a time and mix until dough ball starts to form. Turn out the ingredients on a piece of parchment paper and knead by hand until dough ball is completely formed. Wrap in parchment and plastic wrap and cool in the fridge for one hour. Remove from fridge after cooling and roll into flat sheet 1/8 thick. Cut into 1 by 1 squares. Poke holes in middle. Place squares in stoneware pan or parchment paper on metal pan. Brush with oil and sprinkle salt on top. Bake at 375° for 15 minutes. Cool completely before eating.

Cheese Crackers #Shorts
These crispy, crunchy Cheese Crackers are here just in time for back-to-school. They come together quickly in the food processor with only a few simple ingredients, and they taste so much better than the store-bought version. The best part? They pack perfectly in lunchboxes.
Recipe:
Ingredients
8 oz grated cheddar cheese (for best results grate your own cheese from a block) (226g)
1 ½ cup all-purpose flour (165g)
1 ½ teaspoons granulated sugar
¼ teaspoon paprika or smoked paprika
¼ teaspoon Kosher salt, plus additional for sprinkling on top
8 Tablespoons unsalted butter, very cold
3 Tablespoons ice water
Instructions
Note: if your food processor has a grate or shred blade like mine does, just use this to grate your block of cheese directly into the basin of the food processor before beginning.
Combine shredded cheese, flour, sugar, paprika, and ¼ teaspoon kosher salt in the basin of a food processor fitted with the blade attachment and pulse until ingredients are combined and cheese is well chopped up (about 15-20 seconds).
Scatter cold butter pieces over the surface of the ingredients and pulse again until butter is cut into the mixture and the mixture appears pebbly/crumbly.
Add water and pulse until ingredients begin to cling together.
Divide dough into two or three parts and form each into a ball. Flatten each into a square shape and wrap individually in plastic wrap. Place in refrigerator and chill for at least one hour and up to 3 days.
Once dough has nearly finished chilling, preheat oven to 375F (190C).
03:50 Working with one square at a time, roll dough to be between ⅛ and ¼” (0.3-0.6cm) thin.
Use a pastry wheel or pizza cutter to cut dough into 1” squares.
Transfer to an ungreased baking sheet and use a toothpick or the blunt end of a wooden skewer to pierce the center of each square.
Sprinkle lightly with additional kosher salt (I use about 1-2 teaspoon total for all of the crackers) and transfer to 375F (190C) oven and bake for 18-20 minutes.
Allow crackers to cool completely on baking sheet before enjoying.

Storing
Store in an airtight container at room temperature for up to one week.
