Garden fresh Swiss chard
Swiss chard with a delicious, easy homemade sauce.
Swiss chard is a nutritional powerhouse -- an excellent source of vitamins K, A, and C, as well as a good source of magnesium, potassium, iron, and dietary fiber. It's also very easy to grow, doesn't need much maintenance. Can be used in many different ways, this recipe is a favorite, we use it as a side dish, and leftovers go great with sandwiches.

Recipe
Ingredients
Stalk of Swiss chard
Olive oil
Garlic
Hot pepper (or hot pepper seeds)
Basil
Salt and pepper
Tomatoes
Water
Directions
1 Separate the leaves from the stalks because the stalks take more time to cook
2 In a pan, add some olive oil to cover the base
3 Add 1 or 2 cloves of chopped garlic
4 Add 1/2 of a hot pepper or hot pepper seeds to taste, salt and pepper
5 Fry the garlic and hot peppers for a couple of minutes and add
4 tablespoons of diced tomatoes or a couple of whole tomatoes
6 Let the tomatoes cook a little and add the chopped stalks
7 Add about 1 1/2 cups of water and let boil, reduce by half
8 Add the chopped leaves and cook for a couple of minutes more

Pinto bean and Swiss chard enchiladas
1/4 cup veggie oil
2 onion,finely chopped salt and pepper
3 teaspoons organic sugar
3 tablespoons chili powder
2 teaspoons chopped cumin
6 garlic cloves minced
2 (8oz) cans tomato sauce
1/2 water
1 lb Swiss chard stemmed and sliced into 1/2 in-wide-strips
2 green bell peppers stemmed and seeded and sliced into 1/2 pieces
1(15 oz) can pinto beans rinsed
12 (6 in) corn tortillas, warmed
1 recipe cilantro sauce
1 Avocado halved pitted and sliced into 1/2 in pieces
1/4 cup fresh cilantro leaves

Making Gaz Oakley's Chard Enchiladas Oil-Free
A few weeks ago I got swiss chard in my local CSA produce. I had just watched the latest video by the one and only Avant Garde Vegan, @gazoakleychef, where he made chard enchiladas and I knew I had to try it out! I made a few tweaks so the recipe would fit into my oil-free lifestyle, plus I didn't have all the exact ingredients on hand. Watch the video to see how it turned out!
