CHAMPAGNE JELLY (JAM) - Festive Confiture - BEST CHAMPAGNE DESSERT - CHRISTMAS DESSERT
Champagne Jam: if you have leftover champagne make this amazing Gelée au Champagne. It will go perfectly with your foie gras or fancy cheese boards!
Hello everybody!
We wish you all a Happy New Year 2022, filled with more magic than ever before!
Our recipe for today is Sparkling bright like a glass of champagne:
Champagne Jam / Jelly or Champagne - Gelée au Champagne.
If you have left over champagne and you usually throw it away, don’t! We had some sitting on the table for 2 weeks and it was still good for making this amazing recipe!
Ingredients:
⁃ 850 ml of champagne (feel free to use left overs, we used two kinds of champagne, one of them was a leftover from New Year’s and the other one was even older)
⁃ 850 g of special sugar for confiture (jam sugar (UK), gelling sugar(US) - basically sugar with pectin. You can also use normal sugar plus liquid pectin or Gelfix from Dr. Oetker. Our sugar was a french brand Confisuc - Saint Louis, with 98.5% sugar, citric acid and fruit pectin)
⁃ optional: edible gold flakes, vanilla, spices, etc. (we opted for the simple version here, but gold flakes are on the wishlist).
The ratio for sugar/champagne it’s 1:1 but we used only 750 g of sugar so you can also cut it down.
Mix the champagne with the sugar, bring it to boil and then let it on a medium heat for 20-25 minutes (depending on your stove or pot it could be ready sooner).
You can test it with little drops on a plate, you will see when it’s starting to get some consistency.
Don’t worry, the jam will also get harder after cooling down!
We noticed it formed a white foam, but it was easy to remove it with a clean spoon.
Pur it in the jars while is still very hot (be careful!). Secure the lid and turn the jar upside-down for 1 minute (helps to sterilize).
We got about 3 jars of jam, 320g each.
(Take a moment to appreciate our pretty vintage decorated old spoon!!)
Storage conditions:
Store in a cool and dry place.
Store in fridge after opening.
Tasting advice: It will go perfectly with your foie gras, fancy cheese, grilled sea bass, a plate of Serrano ham, buttery toast, smoked salmon, to bind or deglaze a sauce ...mmm (looks like someone is hungry here).
It’s not too sweet and you can still smell and taste the champagne!
