How To make Champagne Truffles
CENTER MIXTURE:
8 oz Cream
1 lb Bittersweet chocolate
1 oz Butter
1 oz Cognac
ENROBING:
1 lb Bittersweet chocolate
1 lb Cocoa
It is important to use an excellent quality chocolate when making truffles since it is the primary ingredient. Valhrona is my first choice and Callebaut is my second. brING THE CREAM TO A BOIL and pour it over the cut chocolate. Allow to stand 1-to-2 minutes and stir smooth. Beat in the softened butter and cool to set. Beat with an electric mixer (using a paddle attachment if available) on medium speed until light. Beat in Cognac. Pipe out small truffles on parchment or waxed paper with a pastry bag fitted with a 1/2-inch plain tube. Refrigerate to set. Melt the chocolate. Sift the cocoa into a deep pan. Dip the truffles in the melted chocolate and then deposit them in the cocoa, shaking the pan to cover them. After the covering sets, shake the truffles in a strainer to remove the excess cocoa.

When I arrived to Jacques Torres Chocolate in Brooklyn a few weeks ago, I wasn't sure what to expect. I knew I was going to make Champagne Truffles, I was hoping I could sip some champagne, and I was *really* nervous to work alongside Torres, who's famous for his confections (I mean come on, guys, his nickname is Mr. Chocolate). Fortunately, champagne was also on his mind — he was more than ready to pop some bottles.
Learning how to make truffles from the master was ... interesting. He schooled me with how quickly he could whip up an entire batch, from making a super-silky champagne ganache (SO GOOD) to filling the (cork-shaped!) chocolate truffle shells. Torres was quick to reprimand me, but all in good faith; he knew I was trying to get the hang of it.

Pure Cream 170g
Rice syup 85
White Chocolate 575g
Matcha powder 25g
Champagne 90g
Peach Freeze Dried 60g (or 120 Dried)

White chocolate Champagne ganache is a lovely filling for cakes and cupcakes at fancy events.

Ingredients:
•1 cup Champagne
•½ cup heavy cream
•1 pound white chocolate chips
Directions:
•Place the white chocolate chips in a large bowl and set aside.
•In a sauce pan over medium-low heat, warm the Champagne until half of it has evaporated.
•Add half a cup of heavy cream and let it heat up until the mixture beings to boil.
•Once bubbles begin to form around the edges of the sauce pan, remove the mixture from the heat.
•Pour the hot mixture over the white chocolate chips and let sit for 5 minutes.
•Whisk the melting chocolate in the Champagne mixture until they become a smooth, single consistency.
•Refrigerate for at least 2 hours before using as a filling. It can be refrigerated up to a week.
