How To make Catfish Chili
2 lb Catfish fillets, chunked
1 c Chopped green pepper
2 tb Butter
2 Cloves minced garlic
1 1/2 ts Salt
1 lb Red kidney beans
1 lb Can tomatoes, undrained
6 oz Tomato paste
Saute green pepper and garlic in butter until tender. Add seasonings. Mix well. Add beans and tomatoes. Cover and simmer 15 minutes. Add fish. Cover and simmer 15 more minutes until fish flakes easily.

Episode 14 Recipe: Grilled Catfish W/ Ancho Chili & Lime
Ingredients:
Whole milk
1 lime, juiced
1 tsp ground cumin
1/2 tsp garlic powder
1 Tbsp paprika
1 tsp ancho chili powder
1 tsp ground coriander
1 tsp cayenne pepper
Salt
Pepper
Directions:
1) Soak fish in milk for 15-20 minutes.
2) Preheat grill to 375°F
3) Combine cumin, garlic, paprika, ancho chili, coriander, and cayenne in a small bowl.
4) Add lime juice and enough olive oil to make a paste.
5) Coat the fish and add to grill. Cook for 5-6 minutes.
6) Flip and cook until easily flaked with a fork.

Catfish is commonly eaten in Thailand but it. is. so. good. Especially when cooked with Thai/Holy Basil Leaves that are just truly truly so fragrant.

Recipe :
Catfish - 400 g
Thai basil or Holy basil - your preference
Kaffir lime leaves - 5
Big chili - 30 g
Plain water - 240 ml
Veg oil - 2 tbsp
Red chilies - 10
Garlic - 5 cloves
* coarsely blend these 2 together*

Sugar -
Fish sauce - 2 tbsp
Oyster sauce - 2 tbsp
Soy sauce - 2 tbsp

- How To -
Add veg oil to the pan and stir fry the chili&garlic mixture.
Add in fish fish and gently combine.
After a quick while, add in all of the seasoning ingredients and water.
Gently combine and let the fish fully cooks.
Taste test and adjust accordingly.
Add in kaffir lime leaves, big chili and thai/holy basil leaves.
Ready to be served.

Catfish is great prepared on the grill - and this is my recipe for Barbecue Catfish.
I’m firing up my Big Green Egg, but you can use any grill for this technique. Bring the grill temperature up to 400⁰ or medium high temperature.
To create a flat grilling surface; I’m using the back side of my grill grates. Just flip them over on the existing grate and spray a little vegetable cooking spray on the surface. This helps keep the fish from sticking.
Drizzle olive oil over the filets and season each side with Lemon Pepper and Killer Hogs Hot BBQ Rub.
Slice a couple lemons and limes into rounds and place 2-3 on the cooking surface. Top the lemon/lime slices with a single filet and grill for 4 minutes.
After 4-5 minutes, Brush the bbq butter glaze* over the top of each filet and continue to cook for 5 additional minutes.
BBQ Butter Glaze:
½ cup Killer Hogs The BBQ Sauce
½ stick Butter melted
1 Tablespoon Killer Hogs Hot Sauce
2 teaspoons Lemon Juice
After 9 total minutes of grilling, carefully flip each filet directly onto the grillgrate surface for 1 minute. This step sears the top side and caramelizes the glaze.
Don’t walk away at this point because it can burn in a hurry. It only needs about 1 minute then remove the fish from the grill. I like to serve these BBQ Catfish filets with a pineapple slaw.
The sweet creaminess of the slaw goes really well with the spice and citrus notes of the barbecue catfish.
