Cooking With Captain Seth - Venison Neck Pot Roast
Introducing **Cooking with Captain Seth**
This YouTube only series is kicking of with The Captain giving us a great simple recipe for a Venison Neck Pot Roast! These recipes are made for the every day family with every day kitchens in mind. Seth will providing us with do it yourself wild game recipes from his adventures in the woods and water.
Recipe:
Marinade-
-1 bottle of red wine
-10 allspice berries, crushed
-10 black peppercorns, crushed
-3 bay leaves
Bring to a boil, let cool, submerge roast and store in fridge for 12h to 4 days
Roast-
-kosher salt
-1 cup flour
-3 tablespoons paprika
-1 teaspoon cayenne
- ¼ cup lard or bacon fat
-2 yellow onions
- 2 celery stalks
-3 carrots
-2 parsnips
- 3 Yukon gold potatoes
- 1 turnip
Remove the roast from marinade(save), dry and salt well.
Mix flour, paprika, cayenne and coat roast.
Heat lard/bacon fat, in large, lidded pot and brown meat on all sides then remove from pot.
Preheat oven to 325F, slice onions and add to pot and brown well 5-10 mins.
Add 2 cups of marinade and boil, add roast and 2 cups water and simmer, then add to oven with lid on and cook for 1.5-2.5 hours depending on age of deer.
Cut celery, carrots, parsnips, potatoes and turnip into large chunks.
Add to pot after 1.5-2.5h cooking and cook for additional 1.5 hours.
Remove roast and slice, serve with the root veggies, some hearty bread and sour cream.
