How To make Cappucino Chocolate Cheesecake
1 1/4 c Chocolate wafers, crushed
1/8 ts Cinnamon
1 pk Light cream cheese (8 oz)
1 c Sugar
1 c Unsweetened cocoa powder
1 ts Cocoa powder for garnish
2 1/2 c Sour cream
2 Eggs
2 T Coffee liqueur
1 ts Vanilla
Preheat oven to 350F. Stir together wafer crumbs and cinnamon. Pat into bottom of 9-inch springform pan. Beat cream cheese until light and fluffy. Beat in sugar and cocoa powder. Beat in egg. Stir in 2 cups sour cream, coffee liqueur and vanilla. Turn into prepared pan. Bake for 30 minutes or until set. Spread remaining sour cream evenly over top. Return to oven 1 minute to glaze top. Cool to room temperature, then chill thoroughly, covered. Remove from springform pan. Just before serving, dust top with cocoa powder.

Υλικά:
Για τη βάση:
20 Μπισκότα Digestive
120g Βούτυρο, λιωμένο
3 κ.σ. Καστανή Ζάχαρη
Για τη γέμιση:
180g Γάλα Πλήρες
10g Ζελατίνη σε Σκόνη
3 κ.σ. Σκόνη Καφέ Εσπρέσσο
2 κ.σ. Ζεστό Νερό
680g Τυρί Κρέμα
230g Στραγγιστό Γιαούρτι, 2% λιπαρά
200g Ζάχαρη
2 κ.γ. Εκχύλισμα Βανίλιας
1¼ Φλιτζάνι Κρέμα Γάλακτος, 35% λιπαρά

Εκτέλεση:
Σε ένα μπλεντεράκι αλέθουμε τα μπισκότα. Τα βάζουμε σε ένα μπωλ, προσθέτουμε τη ζάχαρη και το βούτυρο, ανακατεύουμε και στρώνουμε το μείγμα ομοιόμορφα σε μία βουτυρωμένη, αντικολλητική φόρμα 23 εκ. με αποσπώμενο πάτο. Βάζουμε τη βάση στο ψυγείο μέχρι να τη χρειαστούμε. Για τη γέμιση, σε ένα κατσαρολάκι βάζουμε το γάλα και στη συνέχεια τη ζελατίνη.
Αφήνουμε για 2 λεπτά και μετά το βάζουμε σε χαμηλή φωτιά ανακατεύοντας συνεχώς μέχρι να λιώσει η ζελατίνη. Αφήνουμε λίγο να κρυώσει. Διαλύουμε τον καφέ στο νερό.
Σε ένα μίξερ ρίχνουμε το τυρί κρέμα και ανακατεύουμε για να αφρατέψει.
Προσθέτουμε το γιαούρτι, τη ζάχαρη, τη βανίλια το γάλα και τον καφέ και ανακατεύουμε για λίγο. Στρώνουμε το μείγμα πάνω στη βάση και αφήνουμε στο ψυγείο για τουλάχιστον 4 ώρες.
Χτυπάμε την κρέμα γάλακτος σε σαντιγί, την απλώνουμε πάνω στο cheesecake και πασπαλίζουμε με την κανέλα.

If you like coffee flavored dessert you are going to love this no-bake mocha cheesecake. Great combination of milk chocolate and coffee! This cheesecake is light, airy and very tasty! And of course, like all my no-bake cheesecakes, this one is also pretty easy to make.

For the crust:
170g (6oz) Biscuits/ Graham crackers
6 tablespoons (90g) butter, melted
1 tablespoon Cocoa powder
For the filling:
2¼ cups (500g) Cream cheese
2/3 cup (160ml) Heavy cream, cold
2/3 cup (80g) Powdered sugar
150g (5.3oz) Milk chocolate
1-2 teaspoons Instant coffee
9g gelatin + 45ml water
1 teaspoon Vanilla extract
For chocolate coffee ganache:
1 teaspoon Instant coffee
1/2 cup (120ml) Heavy cream
100g (3.5oz) Dark chocolate
Directions:
1. Make the crust: In a food processor or a ziploc bag place biscuits and cocoa powder, crush into fine crumbs. Add melted butter and pulse until combined. Press into bottom of 8-inch (20cm) springform pan. Refrigerate while making the filling.
2. Make the filling: In a small bowl stir gelatin powder and water. Let bloom for 10 minutes.
3. Chop milk chocolate and place in a heatproof bowl, add instant coffee. Set over pot with simmering water (double boiler). Melt completely. Remove from heat and let cool slightly.
4. In a large bowl beat cream cheese, powdered sugar and vanilla extract until smooth, add melted chocolate beat until combined and smooth. Add heavy cream and beat until light and fluffy.
5. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cheesecake mixture into the dissolved gelatin and stir until combined. Pour back to the cheesecake mixture and mix until combined. Pour into the springform pan and freeze while making the topping.
6. Make the chocolate coffee ganache: Chop the chocolate, place in a large bowl. Place heavy cream and coffee in a small saucepan and heat over low-medium heat, dissolve the coffee and bring to a simmer. Pour over the chocolate. Let sit for 1-2 minutes. Stir until smooth. Pour over the cheesecake.
7. Refrigerate for at least 6 hours.

So I’m gonna show you a no-bake cheesecake recipe, which will take all the stress away. Plus, it takes about half the time to make.
This is truly the simplest and easiest no-bake cheesecake I have come across with. It’s got a thick graham cracker crust and an easy no-bake cheesecake filling. If you love a fast no-bake dessert then this is the one you should make. By following this no-bake cheesecake recipe, you’ll be gifted with a smooth and creamy dessert that sets up beautifully in the refrigerator.
Unlike regular cheesecake, no-bake cheesecake isn’t overly heavy. It’s lightly sweet and perfectly refreshing with cappuccino coffee mixed with the cream cheese! It is an amazing dessert that your family will love!
