How To make Cannoli Cake 1
1 pk Lemon cake mix; 19 oz
1/2 c Oil
4 Eggs
1 c Milk
2 c Ricotta cheese
3/4 c Sugar
1/2 ts Cinnamon
1 ts Vanilla
Maraschino cherries; opt Preheat oven to 375 degrees. Combine cake mix, oil, eggs and milk and blend thoroughly Pour into two 9-inch round layer pans or one 11x14-inch pan. Bake layers 25 to 30
minutes, and the rectangle at 30 to 35 minutes. Cake is done when it pops back after being pressed lightly with a finger. Let cool. Blend ricotta, sugar, cinnamon and vanilla; mix well. Spread over cooled cake. Dot with maraschino cherries for color, if desired. Helen Jolly -----

1/2 stick ( 4 tablespoons) unsalted butter (room temperature)
3 eggs
1/3 cup Biscoff smooth spread cookie butter
3/4 cup white grape juice
1 teaspoon cocoa powder
1/2 teaspoon cinnamon
Cannoli Filling:
48 oz ricotta cheese (strained)
1 teaspoon cinnamon
1 teaspoon vanilla
1/3 cup granulated sugar
1/3 cup powdered sugar
OR
(Smaller portion Cannoli Filling:)
32 oz ricotta cheese (strained)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/4 cup granulated sugar
1/4 cup powdered sugar
Chocolate Ganache:
2 tablespoons chocolate chips
1 tablespoon heavy cream

Cannoli Crumb Cake Recipe
Awhile back, I got a reply from one of my emails requesting a coffee cake recipe. Up until now, I haven't had a coffee cake recipe up on the blog, but I determined that I really needed one, plus that email kind of gave me a craving for one. I'm calling this one a crumb cake... you can see why in the blog post.
It's kind of the 'tomato' 'to-mah-to' thing. Crumb cake....coffee cake...I'm just using them interchangeably here and calling this one a Cannoli Crumb Cake.
I wanted to make something a little different than the normal coffee cake/crumb cake. Historically, a cannoli is made with ricotta cheese, but I'm not really a stickler for rules, so I went with cream cheese...mainly because I LOVE me some cream cheese.
There's also cinnamon and mini chocolate chips and that combination is insanely good.
This cake is really moist with pockets of cream cheese running through it. It's great with a cup of coffee at breakfast, or just do like I did and eat it at lunch and dinner as well ;)

Cannoli Cake | The MOST Delicious Italian Cake!
This homemade Cannoli Cake is a moist layer cake with a delicious ricotta and mascarpone cheese cannoli filling, and all the classic cannoli flavors you love! This treat is ideal for special occasions, such as birthdays, anniversaries, or for a delicious ending to an Italian meal. This cake is decorated with cannoli on top and ganache rosettes piped on, sprinkled with shredded pistachio. This is going to be your most popular cake dessert! This is undoubtedly the BEST Cannoli cake I have ever eaten! Enjoy!
Makes 12-14 servings
Ingredients:
For the yellow butter cake:
- 3 1/4 cups (425 grams) all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 cup (226 grams) unsalted butter, at room temperature
- 2 cups (400 grams) granulated sugar
- 2 teaspoons vanilla extract
- 6 large egg yolks, room temperature
- 1 1/2 cups (355 ml) whole milk
For the Ricotta filling and cannoli:
- 32 oz. (1kg) whole milk ricotta cheese
- 2/3 cup (65 grams) confectioners’ sugar, sifted
- 1 1/2 teaspoons orange zest
- 1 teaspoon vanilla extract
- 1 1/2 cups (255 grams) mini dark chocolate chips, divided

Mascarpone buttercream:
- 3/4 cup (185 grams) unsalted butter, at room temperature
- 3 cups (365 grams) confectioners’ sugar
- 1 1/2 teaspoons vanilla extract
- 8 oz. (227 grams) Mascarpone cheese, softened
- 1/4 teaspoon salt
- Heavy cream (if needed) (if your buttercream is too thick, add a tablespoon, or so, of heavy cream)
Chocolate Ganache Frosting:
- 2 cups (340 grams) dark chocolate chips
- 1 cup (240 ml) heavy cream
For the Decoration:
- 5 homemade Cannolis
- Chocolate ganache
- 1/2 cup (43 grams) shredded pistachio
- Confectioner's sugar (for dusting)

Today I am going to share a recipe for a cannoli cake that my family absolutely loves. It is so simple and delicious and only takes about an hour to make. I PROMISE once you make it it will quickly become a family favorite!!
CANNOLI CAKE RECIPE:
CAKE BATTER:
2 1/2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
3 large eggs
1 1/2 teaspoons vanilla extract
1 1/4 cup milk
FROSTING:
10 ounces ricotta cheese
16 ounces mascarpone cheese
3 cups powdered sugar
1 tsp vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
12 ounce package mini chocolate chips
INSTRUCTIONS:
1. Preheat oven to 375 degrees and butter and flour 2 9-inch round baking pans.
2. Mix together flour, baking powder and salt until well combined.
3. Beat together butter and sugar in a large mixing bowl with an electric mixer on medium speed until light and fluffy.
4. Beat in eggs one at a time.
5. Add vanilla extract and mix until well combined.
6. Alternate adding dry ingredients and milk into the butter and sugar mixture, beating after each addition until well combined.
7. Pour cake batter evenly between the two cake pans and bake for 20-25 mins, or until a toothpick comes out clean.
8. Cool cakes in pan for 10 mins and then flip onto a wire rack and cool completely.
9. To assemble cake, place one layer on a plate or cake dish and top with frosting. Then top with second cake.
10. Frost remaining cake and add remaining chocolate chips to the sides of cake.
