How To make California Style Huevos Rancheros
1 tb Olive oil
1/2 Medium-size onion, chopped
3/4 c Tomato juice, OR 1/2 cup
-tomato sauce thinned with 2 Tbsp water 1 sm Clove garlic, minced
3 Whole chiles, parched,
-peeled and chopped, OR 4 oz Canned whole green chiles, -chopped 3/4 ts Ground cumin
1/4 ts Ground Mexican oregano
1/2 ts Salt
4 Corn tortillas
4 To 8 eggs
2 Avocados, peeled and thinly
-sliced lengthwise 1/2 c Grated Monterey Jack or
-Cheddar cheese 4 Lettuce leaves, coarsely
-chopped ...Serve fresh fruit, warm wheat-flour tortillas, sweet butter, honey and coffee for a great brunch. 1. In a medium-size saucepan, heat the oil, add the chopped onion, and fry
over medium heat until the onion is translucent. Add tomato juice, garlic, chiles, herbs, and salt. Reduce heat to simmer for about 10 minutes. Sauce can be made a day or hours ahead of time and left at this point. 2. Preheat oven to 350 degrees F. Warm the tortillas by wrapping in foil
and placing on the 4 serving plates (Mexican pottery if possible) in the warm oven. At the same time, warm the extra tortillas you are serving as bread. 3. Poach the eggs, using an egg poacher or a frying pan of hot water with
2 tablespoons vinegar and 1 teaspoon salt added. First break an egg into a
cup, then stir the water in the frying pan vigorously in a circular motion. As you stir, slide the egg from the cup into the water. Cover the pan when all eggs have been added. 4. To assemble the dish, place a tortilla on a plate. Top with a circle
of avocado slices, then arrange a drained poached egg (or 2 eggs) on top, spoon sauce over, and sprinkle with cheese. Place in the oven until cheese melts. Add the lettuce garnish after the cheese has melted. Variation: Instead of the tortillas, rinse large "cupped" iceberg lettuce leaves and serve the eggs topped with sauce in the lettuce leaves. This is a delicious Mexican Hearty Breakfast, this dish brings back many childhood memories and it is a family favorite. Spam has been around for years and it can be prepared so many different ways but mixed with eggs in wonderful salsa ranchera takes it up to the top of the list as one of my favorite breakfast dishes. I love to serve it with refried beans and homeade flour tortillas, if you've never tried it, I hope you consider it because I know you will love it. ❤️
INGREDIENTS FOR SPAM AND EGGS RANCHEROS________________
1 12oz can of SPAM (cubed)
6 large or Xtra large eggs
4 small green onions (chopped with green part)
1/4 C. chopped onions
2 large serrano peppers (slices)
1/3 C. water
Salt (very little, SPAM is salty)
Pepper to your liking
Freshly grated Colby jack cheese or other
REFRIED BEANS___________
Pinto Beans as needed (cooked)
3 Tbls bacon grease or shortening
2 tsp Tomato flavored chicken bouillon
FLOUR TORTILLAS___________
3 C. All purpose flour
1 3/4 tsp salt
3 Tbls shortening
1/4 tsp baking powder
1 C. hot water (not hot to burn you)
*you can add a little bit extra water a little at a time if needed

Loaded Huevos Rancheros
Breakfast is kinda of a big deal here in Southern Cal. As a restaurant person, I never encountered so many breakfast places at one place that are catering just for that, breakfast, closing their doors by 2pm. I have to admit that there is some magic, catching some surf in the early AM, followed with a heart warming breakfast and a good old cup of Joe. It's pretty much... California living in a nutshell.
In that case, I say why start at the bottom and not go straight to the top, the master of all breakfast dishes (...in my opinion), the Huevos Rancheros.
This is my version of a 'Loaded' Huevos Rancheros, with chorizo sausage, beans, avocado, salsa, bacon, cheese... I went for it, ignoring all the stop signs.
So... Let's do this!
