INGREDIENTS
FOR THE HUEVOS RANCHEROS:
1 tbsp. extra-virgin olive oil
1 onion, chopped
1 tsp. cumin
1 tsp. chili powder
kosher salt
1 c. black beans, drained and rinsed
1 c. salsa
1 c. Shredded Monterey Jack
4 large eggs
FOR SERVING:
4 corn tostadas
1 avocado, sliced
1 tbsp. freshly chopped cilantro
Hot sauce
sour cream
DIRECTIONS
1. Preheat oven to 400º.
2. In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Season with cumin, chili powder, and salt.
3. Add black beans and salsa to skillet and stir to combine.
4. Sprinkle all over with cheese, then create four wells with a spoon and crack in eggs. Season with salt.
5. Bake until egg whites are set and yolks still runny, 8 to 10 minutes.
6. Plate on top of tostada. Garnish with avocado and cilantro, then drizzle with hot sauce and sour cream.

Welcome back to my kitchen today I’m going to share with you how I make a easy and delicious tamal Casserole also known as tamal de cazuela, this recipe is super easy yet time consuming ???? but it saves you a lot of time, instead of spreading the masa in an individual husk you get to just spread it in one big dish, today I’m sharing with you my whole family’s favorite, tamales rojos, but you can do the same process with YOUR favorite filling,That’s the beauty of making tamales, the variety of fillings for them are endless, get creative and make your whole family happy! keep in mind like every recipe and every household there are tons of variations that make this delicious recipe, you can always adjust it to your taste, I really hope you enjoy it as much as me and my family do, and as always if you do please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel please hit that subscribe buttons so you can be part of our family!!!!!! ????
I used a 6qt Dutch over or you can use you favorite dish, you can also use banana leaves but tbh I don’t think it mixes too well with the masa it changes the flavor overall, I will definitely use them for more of a chicken or green salsa tho ????

Filing:
2lbs chick pot roast
1/2 onion
3 garlic cloves

Masa:
3 cups Maseca for tamal
3/4 lard
2 1/2 tsp baking powder
1 tsp salt
2 1/2 cup broth
8 New Mexico or guajillo chile pods
2 chile pasillas/ancho
Chile árbol, I use 5
6 tomatillos
1/2 onion
2 garlic cloves
1 1/2 cup broth
1/2 tsp whole cumin

HOW TO MAKE HUEVOS RANCHEROS WITH HATCH GREEN CHILE: Simple Authentic Recipe Using the Best Chile
This video will show you step by step How to Make Huevos Rancheros with Hatch Green Chile. It's a simple, but authentic recipe that I think you'll love.
But it starts with the best chile you can find, and that's Hatch Green Chile. As a native New Mexican, I grew up on it. If it's not in season when you want to make this, check the freezer section at your grocery store. It's becoming more readily available everywhere. But, if you have access to fresh chile, start by roasting and peeling it. Then follow the recipe below.
Huevos Rancheros
5-6 Hatch green chiles (roasted, peeled & chopped small)
1/2 large white onion, finely chopped
2-3 garlic cloves, minced
4 roma tomatoes, chopped small
1/2 tsp. salt
1/2 tsp. cumin
1/2 cup water (You can add more or less, according to your liking)
corn tortillas
eggs
grated cheese of your choice
cooking oil
Heat oil in large saucepan over medium high heat. Add chopped onion and sauté for a couple of minutes. Then add chile, tomatoes, garlic and stir. Season with salt and cumin. Add water and mix well. When chile comes to a boil, lower heat and let simmer for 15 minutes, stirring occasionally.
In small frying pan, place enough cooking oil to where it's about 1/4 deep and heat on stovetop over medium high heat. Fry corn tortillas in the hot oil until desired crispness, being sure to flip over at least once. Drain excess oil and put on plate. Smother top of fried corn tortilla with chile sauce, sprinkle cheese on top. Then, fry egg in same frying pan with the hot oil. Place fried egg on top of corn tortilla and chile. Garnish with a little more chile and cheese, as well as salt and pepper to taste, and serve with hot pinto beans.

4 1/2 to 5 cups (1 L to 1.2 L ) broth or water
2 1/2 lbs (1.13 kg) shredded or chopped cooked turkey meat
1/2 small onion
3 to 4 cloves garlic
8 dried guajillo chiles (stems and seeds removed)
2 dried Pasilla chiles (stems and seeds removed)
2 dried ancho chiles (stems and seeds removed)
2 cloves garlic
4 cups (475 g) instant corn flour (I used Maseca brand)
2 1/2 tsp baking powder
1 1/4 cup (250 g) lard or shortening
salt to taste
2 Tbsp oil (to simmer puree)
40 to 50 corn husks
16-quart steamer pot
TURKEY PREP
10 lbs Turkey (completely thawed)
1 Tbsp seasoning salt
2 tsp garlic powder
2 tsp onion powder
2 tsp lemon pepper
2 to 3 cups water or chicken broth to the bottom of the pan
*BEEF TAMALES*
4 1/2 to 5 cups (1 L to 1.2 L ) beef broth or water
4 lbs (1.81 kg) boneless chuck roast beef
1 small onion
3 to 4 cloves garlic
1 beef bouillon cube (or 2 tsp salt)
1 dried bay leaf
8 dried guajillo chiles (stems and seeds removed)
2 dried Pasilla chiles (stems and seeds removed)
2 dried ancho chiles (stems and seeds removed)
2 cloves garlic
4 cups (475 g) instant corn flour (I used Maseca brand)
2 1/2 tsp baking powder
1 1/4 cup (275 g) lard or shortening
salt to taste
2 Tbsp oil (to simmer puree)
35 to 40 corn husks
12 to 16-quart steamer pot
*BEAN & CHEESE TAMALES*
50 presoaked corn husks
16-quart steamer pot
*MASA*
4 cups (475 g) instant corn flour (I used Maseca brand)
2 1/2 tsp baking powder
1 1/2 tsp salt
1 cup (200 g) to 1 1/4 cups (275 g) lard or shortening
3 1/2 cup (828 ml) warm chicken broth
*FILLING*
5 to 5 1/2 cups (1.12 kg) cooked beans (drained)
1 1/2 to 2 cups (354 to 473 ml) bean broth
1/2 tsp garlic powder
1/2 tsp onion powder
salt and pepper to taste
1 1/2 lb (680 g) cheese of your choice
*I used pepper jack cheese
pickled jalapenos (optional)
*NOTE* Keep extra warm water or broth on the side just in case the masa dough starts to dry out
TAMAL ASSEMBLY
- Take your softened presoaked corn husk and spread from the center 3 to 4 Tbsp of masa dough on the corn husk leaving a one-inch space from the top of the husk
- Next, add meat filling and enclose the tamal
- Now fold the bottom part of the husk up and continue the process
COOK TAMALES
- In a 16 quart steamer pot add 2 1/4 liters of water to the pot then place the steamer plate in
- Place a small heat-proof ceramic or stone bowl upside down in the center and start stacking all of your tamales around the bowl
*NOTE* The cooking time will vary depending on how tightly you pack the pot
- Now place extra corn husks on top to cover tamales, a cloth and cover with the lid
- Bring the water to a boil first, lower the heat to medium heat, and cook for 1 hour to 1 hour and a half or once a tamal comes out easily from the corn husk
- Remove all the tamales from the pot and allow to set for at least 20 minutes then serve

1 lb lean ground meat of choice
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
8 oz Colby Jack cheese
8.5 oz box of Jiffy Cornbread Mix
1 large egg
1/3 cup milk
1 cup cheese
3 oz can green chiles
ENCHILADA RED SAUCE
3 Tbsp cooking oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp beef or chicken bouillon powder 2 cups water
salt and pepper to taste
Bake in an 8 x 12 buttered baking dish at 400° F for 25 to 30 minutes
