Ingredients
1 cup 2 sticks unsalted butter, softened 226g
3/4 cups granulated sugar 150g
1 teaspoon vanilla extract
1/2 teaspoon salt
2 1/4 cups all-purpose flour 280g
1 cup dark chocolate melting wafers or semisweet chocolate chips for drizzling/dipping optional
Instructions

00:27 In a large bowl with an electric mixer (or using a stand mixer) beat butter until creamy.
01:05 Add sugar, vanilla extract, and salt, and beat until completely combined.
01:46 Gradually add flour until completely combined into butter mixture. Be sure to scrape the sides and bottom of the bowl as needed so all flour is incorporated. Stir until combined, but try not to over-work the batter as this can warm it up and make it sticky/difficult to manage.
02:38 Use a spoon or spatula to work dough together into a ball and then transfer to a piece of plastic wrap or wax paper. Work into a disk then transfer to refrigerator to chill for at least 15-30 minutes.
Once dough has nearly finished chilling, preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside.
03:20 Once dough has finished chilling, transfer to a lightly floured surface and use a rolling pin to roll out to just over 1/4 thickness. Use round, 2 1/2 cookie cutter to cut into shapes. 03:51 Use a spatula to transfer to prepared baking sheet. Space cookies at least 1 apart.
04:55 Bake in 350F (175C) oven for 15 minutes or until edges are just beginning to turn a light golden brown. Allow to cool completely on baking sheet before enjoying or dipping in chocolate.
05:16 If you'd like to dip/drizzle in chocolate, prepare melting wafers according to instructions on packet (or melt chocolate chips in a heatproof bowl in 15 second increments, stirring well between, until completely melted). Dip cooled cookies in chocolate or drizzle chocolate over cookies. Allow chocolate to harden completely before enjoying.

Ingredients
8 TBSP unsalted Butter
1 cap full Pure Vanilla Extract
1/4 - 1/2 Tsp salt (depends on your taste, I prefer 1/4 Tsp)
1/4 c granulated sugar
1 C. Flour
Bake on 325f until the bottoms are lightly brown
*Tip* Allow melted butter to cool for 5 minutes before adding the rest of the ingredients for better cookie texture

Ingredients
3/4 pound unsalted butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
6 to 7 ounces very good semisweet chocolate, finely chopped
Directions
Preheat the oven to 350 degrees F.
In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and 1 cup of sugar until they are just combined. Add the vanilla. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 30 minutes.
Roll the dough 1/2-inch thick and cut with a 3 by 1-inch finger-shaped cutter. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 20 to 25 minutes, until the edges begin to brown. Allow to cool to room temperature.
When the cookies are cool, place them on a baking sheet lined with parchment paper. Put 3 ounces of the chocolate in a glass bowl and microwave on high power for 30 seconds. (Don't trust your microwave timer; time it with your watch.) Stir with a wooden spoon. Continue to heat and stir in 30-second increments until the chocolate is just melted. Add the remaining chocolate and allow it to sit at room temperature, stirring often, until it's completely smooth. Stir vigorously until the chocolate is smooth and slightly cooled; stirring makes it glossier.
Drizzle 1/2 of each cookie with just enough chocolate to coat it.
