How To make Brown Rice Muffins
1 cup brown rice
cooked, cold
1 cup skim milk :
or substitute
4 egg white -- beaten-or substitute
2 tablespoons honey
1 teaspoon vanilla
1 teaspoon cinnamon
1 1/4 cups whole wheat flour
1 tablespoon baking powder
Combine rice, milk, egg whites, honey and vanilla. Add dry ingredients and stir just enough to moisten. Pour into non-stick muffin pans or pans lightly misted with cooking spray. Bake at 400 deg F for 25-30 minutes.

Broccoli Cheese & Rice Muffins
• 1 cup 4Sisters brown rice, cooked
• 4 large eggs, beaten
• 3 cups fresh broccoli florets, chopped
• ½ cup yellow onion, chopped
• ¾ cup sharp cheddar cheese, shredded
• ¾ cups cottage cheese
• 1 tsp. sea salt
• ½ tsp. black pepper
• 2 tbsp. unsalted butter
• ¼ tsp. garlic powder
Directions:
• Beat eggs in large mixing bowl. Stir in cooked brown rice, cottage cheese, cheddar cheese, garlic powder, onion, salt & pepper, to taste. Gently mix the broccoli into the cheesy rice mixture.
• Using a greased or paper lined, 12-cup muffin tin, spoon the broccoli rice mixture evenly into each cup.
• Bake at 350 degrees for about 25 minutes or until firm to touch in the center.
*Makes 12 muffins
**These can be frozen after baking.
***These make a great easy make ahead snack!

A recipe created by me for making rice muffins
the whole recipe:
ingredients:
1 cup of rice flour
3 tablespoons of cane sugar (brown)
2 teaspoons of baking powder
1/2 teaspoon of salt
1/2 teaspoon of cinnamon
1 teaspoon of grated orange zest
chopped chocolate and hazelnuts
1/2 cup of milk
2 tablespoons of oil (can be olive)
1 egg
Preheat the oven to 425°F
In one bowl mix milk, oil and egg, in another bowl mix the rest of the ingredients. Mix both bowls together, fill muffin tin, each about 2/3 full.
Bake for 15-20 minutes (depending on the size) until the edges are slightly browned.
Let muffins to cool 5 minutes before removing from the tin.

✅ Ingredients:
1/2 cup-1 tbsp (85 g) Superfine Granulated Sugar
1/2 cup (120 ml) Water, room temperature
2 tbsp (30 ml) Vegetable Oil
1 cup (130 g) Gluten Free Flour (I used Robin Hood Gluten free all purpose flour blend with xanthan gum included, not sponsored)
1 tsp (4 g) Baking Powder
1/4 tsp (1.25 g) Baking Soda
1 tsp (5 ml) Vanilla Extract
1 tsp (5 ml) Lemon Juice
* I highly recommend using a scale to measure the gluten free flour and sugar for this recipe.
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. If toothpick inserted in middle of cake comes out clean, cake is done.
Bake at 330oF (165oC), rack middle position, 20-22 minutes, or until toothpick inserted in the middle of cake comes out clean.

Today, I’m gonna share this, How to make Brown Rice Flour Biscuits
《cooking time》approximately 50mins
《For 12 Biscuits, You will need》 1 TSP=5ml ,1TBSP=15ml
100g Brown Rice Flour (McKenzie's) gluten free
1/2TSP Baking powder (McKenzie's)gluten free
4TBSP Margarine
An Egg
4TBSP Sugar
1/2TBSP Sunflower seeds
《Method》
1. sift Brown Rice flour and baking powder
2. put margarine into bowl
3. add sugar and mix
4. add whole egg and mix
5. add sifted Brown Rice Flour & baking powder, and mix it with spatula
6. rest it in fridge for 20mins
7. preheat oven to 180°
8. divide biscuits dough into 12 and shape it round with hands
9. bake them in oven for 13mins or until cooked
10. enjoy!
