Pie is one of the most famous dishes of the Brittany region in the north-west of France. There are three types of Breton pie. I will tell you how to make a Breton pie with cranberries and apples.

Cape Breton Pork Pies - Date Tarts
These delicious little tarts, from Cape Breton in Nova Scotia, are not made from pork at all. Rather they are filled with sweet, sticky dates. Topped with a lovely butter icing they are perfect little treats. Generally eaten at Christmas time, from what I have gleaned, they are wonderful.

Homemade Apple Pie Crusty and Flaky (Scroll below for all measurement links)
A classic style apple pie that's hard to beat made with a buttery crusty flaky crust. This recipe uses two types of apples, the green granny smith apples for their tartness and softness plus the yellow jonathans which are sweeter and juicier. A few subtle spices are used including star anise, clove and cinnamon. I find that too many recipes are overpowered with spice. This is a perfect balance to enhance the apple flavour and not over power it. By creating the lattice work, the steam evaporates giving you a firmer filling and crustier crust that's not soggy. Great for thanksgiving, Christmas or simply anytime!
Easy Apple Strudel
A simple Apple Strudel recipe. Apple strudel is a German and Austrian style dish that’s been well adopted by the Italians and many other countries. The classic strudel is made with apples but of course you can also use other fruits. Make sure you buy a good quality cooking apple so they don’t fall apart during the cooking process. This version is made using sheets of filo pastry, it’s not authentic I know, but it’s quicker and much easier than making it from scratch. I also like to toast the breadcrumbs so they resemble more of a biscuit base, this adds another level of flavour and also absorbs any moisture from the apples, resulting in a very crispy outside. I like mine packed with apples, but that’s a personal choice, you may like to roll them a little thinner. Either way, enjoy my Simple Apple Strudel with a side of vanilla bean ice cream or freshly whipped double cream.
Layered Apple Cake
This is another one of those simple recipes with impressive results. Layered apple cake is a French recipe also known as invisible cake. It’s called invisible as the apples disappear once the cake is cooked, I think it’s a silly name as the apples are quite visible and that’s part of the beauty. Eighty percent of this cake is fruit, so it is a healthier cake. It also doesn’t have too much sugar. All these thinly cut apple slices smothered in a custard like batter, look very impressive once the cake is cut. And of course it tastes delicious as most apple desserts do. You can layer the apples one by one to make perfect layers, but who’s got time for that unless it’s for a dinner party. I just throw the lot in the cake pan, flatten it and the result is still amazing. It takes no time at all to make. Enjoy my layered apple cake.

French Apple Crepes, a thin apple pancake
A crepe is basically a type of thin pancake made from wheat flour. Crepes originated in Brittany, the Northwest of France and quickly became very popular worldwide. They can be used for both sweet or savoury meals, and can be topped or filled. It’s ideal to purchase and keep a non stick crepe pan, purely for crepe making as they are prone to sticking when cooking. This French apple crepe or thin pancake recipe is similar to crepes Normandes. Apples are cooked in a butter caramel sauce, with raisins and cinnamon and filled inside a rolled thin crepe. Enjoy this recipe of thin pancakes (crepes) and see the streets of Paris.

A thin apple tart that's so simple to make! A simple to make French apple tart that tastes so delish! This recipe uses bought puff pastry and can be made so quickly. I used an apple compote to enrich the taste but even that step is optional if you’re short on time. Give this recipe a go you won’t regret it, just try not to eat the all at once as I did!

Breton Apple Cake with Salted Caramel Sauce | Chef Eric Recipe
Every home chef needs 3 great desserts. My wife introduced me to this Breton Apple Cake years ago and I have been making it on the grill ever since. It's a prime example of simple ingredients and methods coming together to produce an approachable elevated and delicious outcome. The Salted Caramel Sauce is literally the icing on the cake that lands this dessert in my top 3. Enjoy! - Chef Eric
Breton Apple Cake with Salted Caramel Sauce
1 Cup All-Purpose Flour
2 tsp. Baking Powder
1½ tsp. Kosher Salt
2 Cups Sugar
2 tsp. Finely Grated Lemon Zest
3 Sticks (12oz) Unsalted Butter, Melted
6 Large Eggs
8 Whole Apples (Granny Smith, Peeled and Sliced ¼-Inch)
4 Tbsp. Sugar for Caramelizing Apple
12-inch diameter cake pan
1 Tbsp. Unsalted Butter (for Greasing the Pan)
2 Tbsp. Flour (for Coating the Pan)
Method for Making the Apple Cake:
1. Stabilize you Kamado Joe to 350°F. Heat 2 Tbsp melted butter in a large skillet over medium heat.
2. Add apples and sprinkle with 4 Tbsp sugar. Cook for 10-12 minutes, tossing occasionally until apples are golden brown.
3. Butter and flour cake pan. Arrange half of the apples in the bottom of the prepared cake pan so most of it is covered and reserve the other half for later use.
4. Place deflector shields in for an indirect cook and set grill grates on the top position of the Divide and Conquer system.
5. Whisk baking powder, salt, lemon zest, 2 ½ cups flour, and remaining sugar in a large bowl.
6. Whisk in eggs and remaining melted butter until smooth.
8. Pour half of batter over apples in cake pan. Top with remaining apples, then pour remaining batter over.
9. Bake cake for 45 minutes or until top is golden and a tester inserted into the center comes out clean.
10. Allow the cake to cool at room temp for 10 minutes, then cool in refrigeration for at least 30 minutes before turning out.
11. Sauce entire cake or slice and sauce.
Salted Caramel Sauce
1 Cup Water
1 Cup Sugar
1 Cup Heavy Cream
1½ Sticks (6oz) Butter, Unsalted
2 tsp. Kosher Salt
Method for the Salted Caramel Sauce:
1. In a small sauce pot, bring water and sugar to a boil, swirling pan occasionally until the mixture has reduced and turned a deep amber color, about 8 to 10 minutes.
2. Remove from heat and slowly add cream while whisking (the liquid will bubble vigorously). Return to medium heat and reduce, stirring occasionally until smooth and thick, roughly 3 minutes.
3. Remove from heat and mix in butter and salt. Use immediately or cool and reserve for later use.

Mini Apple Pies
Apple pie is classic that I love. There is nothing like a piece of warm apple pie with a scoop of vanilla ice cream on top. So I thought making these mini apple pies was a great idea. Then you don’t have to worry about cutting anything. You can just grab your pie and go. This recipe makes 13 mini apple pies. If you would like to make the apple filling in advance it can be stored in an air tight container in the fridge for several days or in the freezer for longer storage. I hope you enjoy this recipe as much as I do.

MY HOMEMADE APPLE PIE RECIPE
PIE CRUST INGREDIENTS:
2 C Flour
1 Tsp. Salt
2/3 C plus 2 Tbs Shortening
Ice Water
FILLING INGREDIENTS:
5-6 Granny Smith Apples
3/4 C Sugar
3 Tbs Flour
1 Tsp Cinnamon
Directions:
CRUST:
1. In a mixing bowl stir together flour and salt.
2. Cut in shortening using a fork or pasty blender until pea size.
3. Sprinkle 2 Tbs of ice water over part of the mixture; gently toss with fork and push to the side of the bowl.
4. Repeat until all the dough is moistened.
5. Gather dough together and create 2 equal dough balls.
6. Wrap separately in cling wrap and chill for 20 minutes.
*While the dough is chilling I like to work on the filling.*
FILLING:
1. Wash, peel, and thinly slice apples.
2. Place apples in a microwave safe mixing bowl.
3. Add sugar, flour, and cinnamon to the mixture and stir.
4. Microwave for 1 minute, stir, microwave for 1 more minute to start the juicing process of the apples.
5. Transfer apple mixture to the pastry lined pie plate.
*blot with extra butter and sugar if desired*
BRINGING IT TOGETHER:
1. Roll out one dough from center to edges on a lightly floured surface.
2. Fold dough in half and carefully pick it up and lay it into a 9 inch pie pan.
*be careful not to stretch the pastry.
3. Add filling* instructions above*
4. Roll out second crust, lay it on top, cut out vents.
5. Trim extra crust and seal the edges.
6. *optional* brush butter, sugar, cinnamon mixture over the top of the pie. (2 Tbs melted butter, 1-2 Tbs of sugar, 1/2 tsp Cinnamon)
7. Bake pie in a 375 degree oven for a total of 50 minutes. Remove foil/edge protector after 25 minutes of baking.
The apples should be tender and the filling bubbly.
