Expert chef instructor King Phojanakong from the Institute of Culinary Education and home cook Lorenzo are trading breakfast burrito recipes and hitting the kitchen. We set Lorenzo up with $206 worth of ingredients and King’s recipe while sending a modest $13 worth of goods back the other way. To assist Lorenzo with King’s surprisingly extensive ingredient list, food scientist Rose dialed in to lend some expert advice. Which breakfast burrito are you starting the day with?

Make Your Own: McDonald's Breakfast Burritos
I know these are only $1 at McDonalds but I rarely want to drive there in the morning to get these so I decided to learn how to make them at home. And now you can too! For anyone wanting to debate the costs of these, see below for total costs to make these at home. Again, sorry for the voice...it was 7am and I was barely awake when I recorded this, lol!
What you'll need (full recipe)*:
1 lb breakfast sausage
2 Tbsp dried onions, rehydrated with 2 Tbsp hot water
1-4oz can chopped green chilies
1/2 cup drained diced tomatoes
16 8 tortillas (Azteca is closest to what McD's uses)
16 slices American cheese
16 eggs, scrambled
waxed paper**
In a large skillet, brown sausage with rehydrated onions. When cooked through, drain. Add tomatoes and green chilies. Heat through and set aside.
On a large griddle, scramble eggs. When about done, add sausage mixture. Mix to combine.
Lay out one tortilla on each piece of waxed paper. Fold cheese in half and lay across tortilla at an angle. Add 1/16 of egg/sausage mixture. To roll, bring bottom of tortilla up and over the eggs, pulling back to make the roll tight. Fold over the bottom corner of waxed paper, then a side corner, folding the tortilla over about 1. Fold over the other corner of waxed paper, not folding the tortilla with it. Then continue rolling. If you wish, microwave for 15-20 seconds to reheat burrito.
*I made half a recipe of the sausage mixture and 1/4 of the actual burritos, saving half of the half sausage mixture for later.
**You can skip the whole waxed paper ordeal and just roll these up, put onto a plate and cover with a towel and get the same effect. Saves on waxed paper as well.
For anyone who wants to debate that McDonalds burritos are cheaper, this is my cost breakdown as of 9/12. I know anyone who does choose to make a comment about it won't read this but it's here for you intelligent people who do read full descriptions:
Sausage (1lb/$1.99)...$1.99
Onions (maybe .25)...$0.25
Tomatoes (1/4 of 15oz can .64)....$0.16
green chilies (1-4oz can .54)...$0.54
Eggs (1 dozen $1.88)....$2.50
cheese (16 slices $2.54)....$2.54
tortillas (10/pkg $1.64)....$2.62
Total for 16 burritos: $10.60

The Breakfast Burrito that CHANGED My Life | Meal Prep
This freezer-friendly breakfast burrito changed my life. Here's how you can make it, too....
⚪FULL RECIPE⚪
~ INGREDIENTS ~
- 6 Ultimate Tortillas (
- 1 lbs of 93/7% ground turkey
- 18 large grade A eggs, whisked
- 1 lbs (453g) whipped lowfat cottage cheese
- ½ bunch of kale (roughly 2 cups), chopped
+spices+
- 1 Tbsp (8 g) chili powder
- 1/2 tsp (2 g) paprika, smoked preferably
- 1 tsp (3 g) onion powder
- 1 tsp (3.5 g) garlic powder
- 1/2 Tbsp (4 g) cumin
- pinch (¼ tsp) oregano
- 1 tsp (2 g) black pepper
- 1 tsp (9g) salt (or to taste)
~ INSTRUCTIONS ~
- Brown and cook meat in pan with spices on medium-high heat
- Add the cottage cheese and mix well
- Add in the kale or other veg and cook down until starting to thicken
- Put meat in a bowl or on a plate to cool and thicken
- Lightly scramble eggs over medium-high heat until cooked and creamy
- Put into container to cool
- Portion out fillings into 6 Ultimate Tortillas and wrap
- Place burritos into a baking dish or onto a tray to let freeze overnight
- Put burritos into freezer-safe containers or ziplock bags and keep in freezer for up to three months
~ WARMING BURRITOS~
The best way to eat a breakfast burrito is to plan ahead the night before. Put one in the fridge before bed so that it has the chance to dethaw before you microwave it in the morning. Then Microwave for 2 minutes and let cool for 1-2 minutes before eating. Otherwise, place straight in microwave for 2 minutes, cut in half, and microwave for another 2 minutes.
