How To make Brandy Snaps
4 ounces golden syrup
3 1/2 ounces caster sugar
4 ounces butter
3 1/2 ounces flour -- sifted
1 teaspoon ground ginger
grated rind of 1 lemon 1 teaspoon lemon juice or brandy
Put the syrup, sugar and butter into a heavy saucepan and warm, stirring, until the sugar has dissolved and the butter melted. Remove from the heat and tip in the flour, ginger and lemon rind. add the lemon juice or brandy and mix well. Drop teaspoonful of the mixture 3 inches apart, on greased baking sheets. Bake in a pre-heated moderate oven(325F) for 10 minutes or until golden brown. Remove from the oven and roll around the graesed handle of a wooden spoon whilst hot. do not allow them to cool as the snaps will become hard and impossible to roll.

My name is Chef Ashutosh Singh .
Brandy snaps are a popular snack or dessert food in European countries .They are often tubular, brittle, sweet, baked. Brandy snaps are typically served filled with whipped cream.They are commonly made from a mixture of golden syrup, flour, cream, sugar, butter and lemon juice.
BRANDY SNAPS
Ingredients
95 gr Honey
138 gr Flour
175 gr Icing sugar
90 gr Butter
Method
1. Mix all together
2. Keep mix in the fridge
3. Put small lumps on silpat or greased trays
4. Bake at 180c
1-Preheat oven to 180°C
2-In a bowl take melted butter and add honey .
3-Add dry ingredients to form a paste.
4-let the mix cool down in fridge for 30min.
5-Line a baking tray with silicon sheets and make round balls of 15gm
6- arrange on tray at equal distance.
7-bake at 180c for 20min, till you get golden colour.
6-Leave to cool slightly before putting in tart mould. Leave to set until hard and cool.
7-You can also make brandy snap baskets or different shapes
8-Store in an airtight container.
9-or you can pipe drop of cream on individual, top with cherry & chocochip.
10- dust with icing sugar.

Brandy Snaps - shapes and finishing
Today we are going to learn how to make brandy snaps, a popular petit four/ accompaniment to desserts back in the 80s but still delicious today! These can be shaped into any shape that you can think of but remember to be quick and only cook a few at a time. although these are called brandy snaps, traditionally they don't contain any brandy at all but modern recipes will sometimes call for a teaspoon or two of brandy.

Recipe
50g (2oz) butter
50g (2oz) caster sugar
50g (2oz) golden syrup
50g (2oz) soft/plain flour
1/2 tsp ground ginger
1 tbsp lemon juice
oven set to 170c/340f - cook for 8 minutes or until evenly golden brown
other ingredients: melted chocolate, chopped nuts, creme chantilly, fresh fruit
