Keto Peanut Butter Cookies
These keto peanut butter cookies are easy and only 2 net carbs per cookie! The perfect keto treat the whole family will love.

INGREDIENTS
2/3 Cup Almond flour (My favorite brand on Amazon (affiliate link)
1 teaspoon Baking soda
1/2 Cup Unsalted butter, softened
1 Cup Creamy peanut butter-unsweetened
1 Cup Brown Sugar sweetener (My favorite brand on Amazon (affiliate link)
Unpacked
1 Large Egg, beaten
1 teaspoon Vanilla Extract
INSTRUCTIONS
line 2, 9x13 baking sheets with a baking mat or parchment paper.
Mix almond flour and baking soda in a medium mixing bowl and set aside.
Add the butter, peanut butter and brown sweetener to the medium mixing bowl with the almond flour and baking soda, mix until smooth. Add the beaten egg and vanilla and mix again until smooth. You can use an electric mixer or a stand mixer.
Cover dough and let refrigerate for about 20 minutes.
Preheat the oven to 350F.
Scoop the batter into 15 cookies evenly spaced on the baking sheets. Bake for 15 minutes.
Remove from the oven and let stand for about 20 minutes. Serve.
JENNIFER'S TIPS
I used a room temperature container of natural peanut butter. If your peanut butter has been sitting in the refrigerator, you will need to leave it out to soften for a bit where it is more pourable.
Almond butter can be used in place of the peanut butter
If you do not have the brown sweetener, you can use regular granular but the texture may be a little different.
If you would like cookies that are less calories dense, you can make them smaller.

How to bake a sublime Ginger Biscuit | Paul Hollywood's Easy Bakes
This week Paul is Baking Ginger Biscuits. Crisp and crunchy with a hint of warming spice, you can’t beat a ginger biscuit. A perfect biscuit for dunking into a cuppa!
Makes 18
225g plain flour
2 tsp ground ginger
½ tsp bicarbonate of soda
100g golden caster sugar
100g butter, softened
100g golden syrup
Mix the flour and sugar together. Add the butter and rub it until it resembles breadcrumbs. Add the syrup, ginger and bi carb. Using a hand-held electric whisk or wooden spoon mix to form a smooth dough. Wrap the dough in cling film or baking paper and chill for 30 minutes to firm up. Heat your oven to 190°C/Fan 170°C/Gas 5. Line two baking trays with baking paper. Break off small pieces of dough, each about 30g, and roll into balls. Place on the prepared baking sheets, allowing enough room for the biscuits to spread. Bake for 10–12 minutes until they are golden with a cracked surface. Leave the biscuits to cool on the tray for a few minutes until firm, then transfer to a wire rack to cool completely.

THE BEST KETO PEANUT BUTTER COOKIES
Are you a cookie snacker? I always like a good cookie! While my favourite is chocolate chip, PB is my second fav and I have to admit - these keto peanut butter cookies are rapidly rising to the top of my cookie list!
Crispyy, moist and DELICIOUS. These low carb peanut butter cookies are also fairly large which is perfect! For this recipe, I based it off my chocolate chip cookie recipe and it did not disappoint.
As with most of my recipes, I really like to use whey isolate. Especially in cookies - it makes them fluffier, crispier and most importantly - that wheat flour texture but without the wheat. Honestly, in my opinion, the isolate makes or breaks these recipes! It's a must if you want that typical cookie feeling.
1/2 cup (100g) butter – room temperature
1/4 cup (70g) peanut butter - no sugar added
1/2 cup (100g) sugar substitute
1 egg
1 tsp vanilla extract
1 3/4 cups (175g) almond flour
2 tbsp whey isolate
1 tsp baking soda
1/4 tsp xanthan gum
In a large mixing bowl, use a stand mixer or spatula to cream the butter, peanut butter, sugar substitute and vanilla together.
Crack in the egg and mix again.
Pour in the almond flour, whey isolate, baking soda and xanthan gum.
Mix thoroughly. Make sure that the dough is very well mixed and that there are no clumps of butter in the dough.
Place tbsp size balls of dough onto a cookie sheet lined with parchment paper. Leave enough room between so they can spread (they will!!)
Bake at 350°F / 175°C on the bottom rack for 12 minutes.
This makes roughly 20 cookies
