How To make Brandied Fruit Starter For Friendship Cake
-Pat Dwigans fwds07a- 1 cn Sliced peaches; 20-oz can,
- chopped, with juice 2 1/2 c Sugar
1 pk Dry yeast
TENTH DAY:
1 cn Chunk pineapple; 15-oz can,
- with juice, cut chunks in - half 2 1/2 c Sugar
1 cn Fruit cocktail; with juice,
- 15-oz can
TWENTIETH DAY:
2 1/2 c Sugar
2 Jars Maraschino cherries;
- drained, chopped, - 9-oz jars In a 1-gallon glass or crockery jar with loose fitting lid, combine sugar, peaches and yeast. Stir daily for 10 days. DO NOT REFRIGERATE. On the 10th day, add pineapple with juice, sugar and fruit cocktail with juice. Stir daily for 10 days. On the 20th day, add sugar and cherries. Stir daily until the 30th day. On the 30th day, drain juice from fruit. Reserve fruit to be used for cakes. Store fruit and juice in glass jars in refrigerator until ready to use. Keeps well. In remaking starter, use 1 1/2 cups of drained juice in the first step of the brandying process with 2 1/2 cups sugar and 20-oz can peaches. Do not use yeast. The yeast is used only to start peaches and sugar fermenting the first time. Friendship Fruit Cake! This is the start of a fermented fruit cake that my mom makes every year for the holidays. She uses the starter from what she drained from the fruit of the previous year. I've added a link to the basic recipe and it has how you can make your own starter to use over and over again. I hate fruit cake but this is the best ever!!! It is called, Friendship Cake! It takes 30 plus days for the fruit to be ready and then if you are not ready to use it, you can store it in the fridge or freezer until needed. Let's ferment some fruit!!!

The World's Easiest Fruit Cake
I've always had the urge to make a fruit cake during the Holidays, but the ones I've had in the past prevented me from doing so. Time after time, I would go to a Christmas party, try a piece of fruit cake, and walk away in disappointment. It was always moist, possessed a wonderful texture, but I hated the taste not to mention the ingredients.
The cake was more often than not made from some recipe that somebody thought they had to follow. The old concept that wonderful Ole Aunt Betsy made it, so it has to be the best. In reality, nothing could be farther from the truth. We all loved Ole Aunt Betsy, so don't get me wrong about that.
Having said that, I went to work and conjured up my own fruit cake recipe. Made with a combination of my favourite nuts and fruits, some cake mix, and the rest of the required baking elements, it came out just as I wanted it. I have to say, I'm now hooked on fruit cake.

30 Day Friendship Cake is finally ready to be made after our fruit has set for 32 days. This cake is full of delicious fruit and tender and light. A must try cake.
Ingredients Used:
2 cups of 30 day fruit drained
1 box vanilla cake mix
1 small box vanilla instant pudding
4 eggs
2/3 cup of vegetable oil
1 cup of walnuts (any nut of your choice)
