1 lb Sharp cheddar cheese 1/3 c Brandy 3 T Butter (room temp) 2 T Heavy cream 1 Dash nutmeg 1 Dash cayenne pepper Put the cheese through a meat grinder, food processor and etc. using the finest blade. Combine the cheese in a mixing bowl with all other ingredients. Mix well. Chill in the refrigerator. Remove from the refrigerator about a half-hour before serving so the cheese may be spread easily. A good bourbon may be substituted for brandy with excellent results. Makes about two cups.

Here is the Greek flaming Cheese (Saganaki)
Saganaki is basically a Greek cheese that’s been pan fried. It has a gorgeous crispy crust on the outside and it’s soft melted cheese on the inside. It’s topped with a squeeze of lemon to cut through the richness. It makes the perfect appetizer to start any meal. This version is flambeed with brandy which is not traditional but adds another layer of flavour. Serve it with black kalamata olives, a crisp salad and crusty bread for an amazing experience.

How To Make Brandied Date & Walnut Cake with Brandied Cream Cheese Spread - Recipe
This dense date and walnut cake, with it’s liberal addition of brandy, is delicious as it is; however, it ges over the top with a thick spread of brandy-infused cream cheese.
INGREDIENTS
BREAD
1 cup brandy 1 1/2 cups chopped dates 1/2 tsp baking soda 1/4 cup butter, cut into pieces 1 egg 1/4 cup molasses 3/4 cup walnut pieces 1 1/2 cups flour 1 tsp baking powder Dash salt
SPREAD
6 oz (170g) cream cheese, room temperature 1/4 cup butter, room temperature 1/4 cup brandy 1/3 cup icing sugar
DIRECTIONS
BREAD 1. Heat brandy in small saucepan, but don’t boil. Add dates and baking soda. Let soak, covered, for 1/2 hour. 2. Add butter and roughly mash dates. 3. In a large bowl, whisk the egg. Add molasses and walnut pieces. Mix in the date/brandy mixture. 4. Combine flour, baking powder, and salt. Mix into wet ingredients. 5. Spoon batter into an 8x4 pound cake tin that has been lined with cooking paper. 6. Bake at 350°F (180°C) for 1 hour. Do toothpick test.
SPREAD 1. Cream butter into cream cheese. 2. Mix in the brandy until well combined. 3. Add the icing sugar and beat until smooth. 4. Cover and chill.
