How To make Bourbon Sauce For Desserts
1/2 c Butter (at room temp.)
1 c Sugar
4 Egg yolks, beaten
Pinch of salt 1 c Cream, heated
1/2 c Bourbon
1. In a small bow, with a hand mixer or whisk, cream butter and sugar. 2.
Transfer to the top of a double boiler and place over, but not touching simmering water. Beat in egg yolks an salt. Slowly add hot cream and stir until thickened. Add Bourbon and stir until an even consistency is obtained. Keep warm. 3. For the Bread Pudding
1/2 cup raisins (85g)
1/2 cup golden raisins (85g)
1/4 cup bourbon whiskey (60 ml)
2 cups whole milk (480 ml)
1 1/4 cup granulated sugar (250g)
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
4 large eggs
8 cups French bread, cubed (225g)
For the Bourbon Sauce
1 cup heavy cream (240 ml)
1 cup whole milk (240 ml)
2 teaspoons vanilla extract
1/3 cup granulated sugar (66g)
Pinch of salt
5 teaspoons cornstarch (16g)
3 tablespoons bourbon whiskey (45 ml)

Today is a fun day baking Bread Pudding, Bourbon Topping Sauce & Bourbon Raisins.

Recipe: Bread Pudding
Mix in Large bowl:
1/2 Cup of Raisins - Soak in Water & Bourbon to taste
1 lb. French Bread
4 Eggs
1/4 Cup Sugar
2 tsp Vanilla
1/2 Cup Butter, melted
Dash of Nutmeg
Dash or two Cinnamon
2 Cups Half & Half
1 Cup Whole Milk
ADD Bread To Large Bowl
Sit for half hour
Add to Baking dish
Layer with Raisins
Bake @ 325 Degrees for 40 to 45 min.
Cool to room temp.
Topping: Vanilla Boubon Sauce
1 Egg
3/4 Cup Half & Half or Whole Milk
1/2 Cup Sugar
Dash of Cinnamon
Dash of Nutmeg
Splash of Vanilla
Splash of Bourbon
Mix well and Simmer at low heat till thickens
