How To make Blue Ribbon Apple Cake
3 c all-purpose flour
2 1/4 c sugar
divided
1 tbsp baking powder
1/2 tsp salt
4 eggs
1 c vegetable oil
1/3 c orange juice
2 1/2 tsp vanilla
4 med baking apples :
peeled/thinly sliced
2 tsp ground cinnamon
powdered sugar
In a mixing bowl, combine flour, 2 cups sugar, baking powder and salt. Combine eggs, oil, orange juice and vanilla; add to flour mixture and mix well. In a bowl, toss apples with cinnamon and remaining sugar. Spread a third of the batter into a greased 10-inch tube pan. Top with half the apples. Repeat layers. Carefully spread remaining batter over apples. Bake at 350 for 55-65 minutes or until a wooden pick inserted near the center comes out clean. Cool in pan 15 minutes before removing to a wire rack; cool. Dust with powdered sugar.

This apple crisp has browned butter in the crisp topping, giving it a beautiful nutty aroma that complements the apples perfectly.
Yield: 6-8 servings
Prep Time: 20 minutes
Cook time: 45 minutes
Ingredients
6 cups (900 g) apples (such as Gala, MacIntosh or other sweet, eating apple), peeled and sliced
¼ cup (60 mL) maple syrup
1 tsp (5 mL) vanilla extract
½ cup (115 g) unsalted butter
1 ¼ cups (115 g) regular rolled oats
1/3 cup (50 g) whole wheat flour
½ cup (100 g) packed light brown sugar
1 tsp (5 mL) ground cinnamon
pinch salt
Directions
1. Preheat the oven to 350 F (180 C).
2. Place the sliced apples in a 6-cup (1.5L) by volume baking dish (any shape). Stir in the maple syrup and vanilla to coat the apples.
3. Melt the butter in a small saucepot over medium high heat until it browns and takes on a nutty aroma (once the foam subsides, it should be done). Set aside.
4. Stir the oats, flour, brown sugar, cinnamon and salt in a mixing bowl. Add the browned butter and stir until blended. Spread this evenly over the apples and bake for about 45 minutes, until the apples yield easily when a paring knife is inserted in the centre of the crisp (the crisp should be bubbling at the edges.) Allow the crisp to cool for 15 minutes before serving.

Here's what you'll need:
1 cup sugar (200g)
2 teaspoon lemon zest (8g)
1/2 cup softened butter (110g)
2 tablespoons of veg oil
2 large eggs (room temperature)
2 tablespoons of lemon juice (30ml)
1 and 1/2 cup all purpose flour (187g)
1 teaspoon baking powder(5g)
1/2 teaspoon salt(3g)
1/2 cup milk (120ml)
LEMON GLAZE:
1/3 cup icing sugar (50g)
2 tbsp lemon juice (30ml)

Dutch Crumb Apple Pie
Slice and peel 8 to 9 apples
Sprinkle with 2 t lemon juice
1/2 c sugar
1/2 t cinnamon
Mix well.
Crumb Topping”
Rub together with fingers:
3/4 c flour
1/3 c cut up butter
1/2 c sugar
1/2t cinnamon (more if you like)
Umtil crumbly
Crust:
1 1/4c flour
1/4 t salt
1/2 c chilled and chopped up butter
1/4 c ice water
Begin with flour and salt and add chopped up butter pieces.
till well combined and course crumb like.
Add chilled water Tablespoon at a time till a soft dough forms.
Roll into ball and flatten slightly. Wrap in plastic, refrigerate till needed.
Crispy, buttery Baked Chicken
8 bone in, skin on Chicken Breasts
One stick butter and 1/4c coconut oil (optional)
Melt butter alone in pan in a 400 oven till melted
Take 2 c AP flour and add seasonings of your choice.
Place in ziploc bag and add:
I like onion powder, garlic powder, salt, Italian seasons.
start with a teaspoon of each and add more if desired.
Give it the sniff test.
Take melted butter pan out of oven and begin dipping the chicken into the seasoned flour.
Place into hot butter.
Continue till done.
Bake for 30 miin (400 degree oven)
Turn chicken over and bake another 30 min. till crispy on top.
