1 c Dried black beans
4 Bell peppers
1 tb Olive oil
1 c Onions; chopped
1 tb Chili powder
1 ts Ground cumin
1 ts Dried basil
1/2 ts Dried oregano
1 tb Wine vinegar
2 1/2 c Brown rice; cooked
pn Sea salt 1 md Tomato; chopped
Prepare beans according to package directions. Cut peppers in half lengthwise and remove seeds. Steam peppers, cut side down, over 1/2" boiling water until nearly tender, about 8 to 10minutes. Rinse with cold water, drain and set aside. Preheat oven to 350 deg. Heat oil in a skillet over mediumheat.Saute onion until soft and translucent. Add chili powder, cumin, basil, oregano, beans and vinegar; mixing well. Stir in rice, salt and tomato. Remove from heat. Fill peppers with bean mixture. Place in a shallow baking dish. Bake, covered, until peppers are tender, about 15 minutes. Serve immediately. Per serving: 233 cal; 13 g prot; 303 mg sod; 30 g carb; 7 g fat; 0mg chol; 34 mg calcium

Ingredients:
Stuffed Peppers:
6 pcs of 5 oz large bell peppers of your choice
1½ lb ground chicken
7½ oz fresh mushrooms of your choice, chopped
⅓ cup green onions, thinly sliced
6 garlic cloves, minced
2 eggs
2¼ tbsp cornstarch, plus more for dusting
1½ tbsp oyster sauce
1 tbsp soy sauce
1½ tsp minced ginger
⅓ tsp salt
Vegetable oil for brushing
Black Bean Sauce:
Either 3 tbsp black bean paste or 1½ tbsps preserved black beans
1½ cups chicken broth
2 cloves garlic, minced
2 tbsp vegetable oil
1 tbsp minced ginger
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp cornstarch dissolved in 1 tbsp water
2 tsp sesame oil
2 tsp rice wine
½ tsp brown sugar
½ tsp salt
¼ tsp ground white pepper

Stuffed Peppers:
0:09 Combine all your ingredients together in a large mixing bowl, except for the bell peppers. Mix until evenly incorporated.
0:44 Cover and set aside in a chilled area. Allow the protein to firm up, for at least an hour.
0:55 While waiting, cut a ½-inch thick slice from the top of each pepper and set it aside.
1:05 Remove the core, membranes, and seeds of the bell peppers either using a spoon or a sharp paring knife. Gently tap to remove the seeds at the bottom.
1:10 Sprinkle roughly 2 tbsps cornstarch and tap to remove any excess. This will allow the filling to stick to the bell peppers.
1:15 Preheat your oven to 350 degrees F.
1:18 Once the proteins have firmed up, fill up your bell peppers.

Black Bean Sauce

2:22 Add your cornstarch slurry and reduce to a simmer. Continue simmering until thickened, roughly 5 to 7 minutes.

Hello awesome people, thanks for checking out this recipe! As I said it’s healthy, delicious and great for you. You can also switch up the fillings if you want, some ground beef would work well for meat lovers. It’s an easy tasty family style recipe for lunch or dinner.
Recipe:
3 peppers, cut in half and seeds/stem discarded
1 cup ready made quinoa or cook to package instructions
1 red onion, chopped
2 garlic cloves chopped
1 tsp smoked paprika
1 tsp ground cumin
1 can black beans, drained
1 chopped tomato or 2-3 tbsp canned
Avocado/olive oil to drizzle
Salt and pepper to season
To garnish : pine nuts, feta cheese and parsley
Preheat oven to 200c/400 F
Drain your black beans.
Firstly, halve your peppers and take the seeds and stem out.
Drizzle with oil and and seasons salt and pepper and place in the oven for 6-8 minutes.
Place a saucepan in the hob with a little oil on a medium heat. Add in the chopped garlic and onions. Stir frequently.
Next add the black beans and chopped tomatoes, finally stir through your quinoa cook well for 5 minutes.
Take out peppers and set aside. Stuff the peppers generously with the quinoa mixture and garnish with pine nuts and whichever cheese you fancy.
Place back in the oven for 10 minutes or until the pepper is tender but still holding shape. Scatter over chopped parsley or coriander and dig in!

Stuffed Veggie Black Bean Red Pepper
This pepper is packed with veggies and black beans. The use of nutritional yeast in place of cheese is the healthy cherry on top!
Any roasted veggies you like can be used for this dish.
Filling: I used cauliflower, broccoli, kale, mushrooms, zucchini, onions, garlic and black beans. I tossed these in a marinade of olive oil, apple cider vinegar, fresh rosemary & thyme, garlic powder, & black pepper to taste.
Roasting: place veggies on pan and sprinkle with nutritional yeast. Drizzle more oil over the top. Roast the veggies in a 400• oven until tender. Remove from oven.
Stuffing peppers: wash and dry peppers. Cut the top off and remove the seeds. Generously fill the peppers with roasted filling and sprinkle with more nutritional yeast. Drizzle all peppers with more olive oil, and cover with tops. Place a small amount of water in bottom of pan. Cover with foil and place in oven at 375• until peppers are cooked to your preference.
*Nutritional yeast is commonly used in vegetarian or vegan cooking. It is loaded with health and when avoiding dairy it provides a cheesy flavor when needed.
