Ingredients:
Stuffed Peppers:
6 pcs of 5 oz large bell peppers of your choice
1½ lb ground chicken
7½ oz fresh mushrooms of your choice, chopped
⅓ cup green onions, thinly sliced
6 garlic cloves, minced
2 eggs
2¼ tbsp cornstarch, plus more for dusting
1½ tbsp oyster sauce
1 tbsp soy sauce
1½ tsp minced ginger
⅓ tsp salt
Vegetable oil for brushing
Black Bean Sauce:
Either 3 tbsp black bean paste or 1½ tbsps preserved black beans
1½ cups chicken broth
2 cloves garlic, minced
2 tbsp vegetable oil
1 tbsp minced ginger
1 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp cornstarch dissolved in 1 tbsp water
2 tsp sesame oil
2 tsp rice wine
½ tsp brown sugar
½ tsp salt
¼ tsp ground white pepper

Stuffed Peppers:
0:09 Combine all your ingredients together in a large mixing bowl, except for the bell peppers. Mix until evenly incorporated.
0:44 Cover and set aside in a chilled area. Allow the protein to firm up, for at least an hour.
0:55 While waiting, cut a ½-inch thick slice from the top of each pepper and set it aside.
1:05 Remove the core, membranes, and seeds of the bell peppers either using a spoon or a sharp paring knife. Gently tap to remove the seeds at the bottom.
1:10 Sprinkle roughly 2 tbsps cornstarch and tap to remove any excess. This will allow the filling to stick to the bell peppers.
1:15 Preheat your oven to 350 degrees F.
1:18 Once the proteins have firmed up, fill up your bell peppers.
1:23 Brush the top and the outside of the bell peppers with oil, then place these onto a baking casserole of your choice.
1:31 Roast until the bell peppers are tender and the chicken filling is fully cooked for roughly an hour. Once roasted, remove from the baking casserole and set aside.
Black Bean Sauce
1:39 Heat up your vegetable oil in a wok or skillet. Add the ginger and garlic. Saute until translucent.
1:51 Deglaze with rice wine and reduce briefly.
1:57 Add the rest of your ingredients, except for the cornstarch and sesame oil. Stir to combine and bring to a boil.
2:22 Add your cornstarch slurry and reduce to a simmer. Continue simmering until thickened, roughly 5 to 7 minutes.

1 can (15 oz) (240 grams) lentils drained and rinsed
1 can (15 oz) (400 grams) diced tomatoes
1 teaspoon salt

2 cups (500 grams) vegetable broth
½ cup (15 grams) parsley chopped

Vegetarian Stuffed Peppers Recipe
These vegetarian stuffed peppers and one of the best vegetarian dinner recipes I've ever made. They are healthy, packed with proteins, easy to make and super delicious. These bell peppers are stuffed with quinoa, black beans and topped with melted cheese. One you try this version of stuffed peppers you will forget about the classic version.
Full written recipe:
Ingredients:
2-3 tablespoons Olive oil
2 Onions, chopped
3-4 Garlic cloves, minced
1/2 cup (85g) Quinoa, rinsed and drained
1 can (150z/425g) Black beans, rinsed and drained
1 can (400g) Crushed tomatoes
Salt to taste
Pepper to taste
1 teaspoon Paprika
1 teaspoon Cumin
1 teaspoon Oregano
2-3 tablespoons Parsley, chopped
8-10 Bell peppers, medium
1/2 cup Tomato sauce
Cheese of your choice

Directions:
1. Cook the quinoa: Rinse the quinoa under cool water, until the water comes out transparent. Put rinsed quinoa in a medium saucepan. Add 1 cup
(240ml) of water, 1/2 teaspoon salt and bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy. Remove from heat and let stand, covered, for 5 minutes. Set aside.
2. Preheat oven to 400F (200C).
3. In a large pan or skillet heat olive oil. Add chopped onion and sauté for 5-6 minutes. Add minced garlic and cook for 2 minutes more.
4. Add cooked quinoa, black beans, crushed tomatoes, seasoning, chopped parsley, and cook for 5 minutes.
5. Cut the tops of the bell peppers and remove the seeds. Fill loosely the peppers with the filling mixture.
6. Spread few tablespoons of tomato sauce at the bottom of a 9X13-inch (22X33cm) square baking dish or a 30cm round baking dish. Arrange stuffed peppers in the baking dish.
7. Sprinkle some shredded cheese on top.
8. Grease with oil a piece of foil and cover the pepper with oiled side down.
9. Bake, covered, for 35-40 minutes, remove the foil and bake for 10 minutes more until the peppers are tender and the cheese is melted.

6 bell peppers
2 cups of brown rice (cooked)...1 cup of dry rice
Baby bella mushrooms
1/2 yellow onion
1/2 cup of chopped bell peppers
Shredded cheese (of your choice...I used cheddar and monterey jack)
14.5 oz can of diced tomatoes
15 oz can of tomato sauce
1 cup of spinach
Olive oil
3 cloves of garlic
Onion powder
Garlic powder
Garlic pepper
No-Salt Seasoning
Smoked paprika
Parsley flakes
Preheat oven to 350 degrees. Pre-bake the bell peppers for about 15 minutes. You could also boil them for a few minutes on the stove. Make your filling. Stuff the peppers with your desired ingredients. Bake in oven for about 20-25 minutes.
